60 Persons With Keen Taste To Be Chosen in Bread Test Agriculture Department Seeks What Would Be Peopl:’s Choice. To bring joy to the lives of the eountry's bread-eaters, the Depart- ment of Agriculture yesterday began @ search for 60 men and women with super-sensitive senses of taste. Per-/ sons subject to frequent head colds | are ruled out at the start. ; Their reward will be an opportunity | to eat three slices of butterless bread | daily for seven weeks, with a glass of water after each slice. The rules governing the choice of the tasters are stringent, for, accord- ing to the Consumers’ Guide of the Agricultural Adjustment Administra- tion, the stake is great—better bread for everybody. Standards Are Set. The lucky 60, to be chosen from the employes of the Bureau of Home Eco- nomics, the Bureau of Agricultural | Economics and the Bureau of Chem- tstry and Soils, must measure up to these standards: They will have to prove that they are keen tasters of the degree of sweet, | galt, sour and bitter in chemically- | pure solutions of sugar, table salt, lac- tic acid and caffeine. | They must indicate at which point | the taste becomes very faint. easily | noticeable, strong and very strong. ‘ Nobody need apply who dislikes the odor or taste of bread, who has & poor | sense of taste or smell or “who is sub- | Ject to frequent head colds.” | The managers of the bread-tasting | derby will eliminate the votes of the | tasters who reverse themselves on & duplicate test. | The purpose of this tasting is to find out what kind of bread would | be the people’s choice of the United | States, where consumption of the : staff of life has declined swx(tly}!he Department, was delivered to during the last two decades. | the taster in cellophane envelopes, Should it be made from soft red | one slice to an envelope.
