And it’s here, I believe, to stay. Today you see sandwiches everywhere. At luncheons, at teas, even at formal dinners! But still sandwich making, as practiced by our foremost chefs, remains a little known art. There are so few really authentic recipes to follow! Even our cleverest hostesses are often frankly at a loss. 3 Sensing here an important need, I have spent the past year experimenting with sandwiches in endless variety. My A LESSON IN SANDWICH MAKING! Thisgroup of young housewives are receiving expert instruction in exactly how the modern sandwich should be made. Toasted sandwiches, topless sandwiches, hearty sandwiches, dainty sandwiches . . . thete's a secret to every one. Through the courtesy of the Continental Bak- ing Company I am printing them here fut the first time, together with three of my original recipes. Do read them over and then try the recipes. The results, I believe, will delight you. My Most Important Secret Without question, much of the success of the sandwiches I make is due to the bread I use. Under no circumstances will I consider any bread but Wonder Bread. There are several ex; cellent reasons for this. First of all, I find it so easy to slice, even when extremely fresh. No matter how thin I may cut it, it never crumbles. This is due, I suppose, to its remarkably fine texture. Second, the delightful way it toasts. There are never any burned edges to cut off. Nor any ‘WONDER PINEAPPLE CREAM CHEESE SANDWICH ., . o Butter two slices of Wonder Bread. Spread one slice generously with eream chesse, On top of the cheese place a layer of drained <rushed pineapple. cheese and pineapple. Cover with second buttered slice of bresd. Trm off erusts and cut diagonally. Now garnish yo.:c sandwich with tioy lettucs leaves and olives. scorched, uneven spots. Every slice is the-same even, golden brown. With toasted sandwiches so popular today, these superior toasting qualities cannot e overlooked. Third, and in mang ways the most important, is the flavor. I have tasted practically every loaf of bread you can buy and many others that you can’t, but never have I found the same delicacy of flavor that I find in Wonder Bread. I believe you will be quick to agree to this. "About My Ingredients Next il importance to the use of Wonder Bread are the fillings I use and the ways I prepare them. Before slicing the bread I see that all necessary tools and ingredients are close at hand. It is highly important, you see, to combine the filling and the bread quickly. I see that my lettuce is washed and dried, salad dressings mixed, my fillings completely pre- pared, ingredients in cans, ready opened. Under no circumstances do I mix my ingredients. Except in special mixture recipes, always keep them completely separate. This allows each individual WONDER CORNUCOPIA SANDWICH. .. Cut very thin pieces of Wonder Bread, with all erusts removed, into fan-shaped pieces. Spread with creamed butter and cover with a thin piece of smoked sturgeon cut the shape of, but a trifle smaller than, the bread. Roll like & cornucopia and seal with butter along the lapping edge. Small sprigs of parsley stuck in the top of each cornucopia add to the appeacance. Pack on a damp cloth, lapping side down, and cover with a damp cloth until needed. Creamed mushrooms, olive and cheese, ereamed chicken or lobster=in fact, any tasteful moist filling, makes the cornucopia sandwich a delights ingredient to maintain its own characteristic flavor. How to Spread on Filling To spread on the filling T use a flat knife. I am careful to spread to even thickness and to the extreme edges. In making exceptionally thin sandwiches I ad- vise a rather unusual procedure even with Wonder Bread. Spread the filling on the open surface of the loaf before slicing. 'This eliminates all possibility of breaking the bread while applying the EHing Cutting a Sandwich rhere is but one really correct way to cut a sandwich. This is from corner to corner, 7 7 7 WONDER FISH CLUB SPECIAL . . . Ingredients: Kippered herring drained and fried quickly in butter, 3 Wonder Bread slices 24 inch thick, mayonnaise. Two risp leaves of lectuce and two slces of tomato soaked for a few minutes in French dressing. Direc- tions s Toast bread golden brown. Spread one pirce on two sides for center, two pieces on one side foe top and bottom. Between the firse and second pieces arrange lettuce, tomato and mayonnaise. Between <ccond and third piece place piping hot kippered herring, Serve ac ‘oace with a bit of celecy and an olive, BAKERS ALSO OF dividing the sandwich into four parts. Thus in eating you taste filling at every bite. You eat towards the crust. The crust itself may then be discarded. Remove the crusts from dainty appetizer sandwiches. But not from the hearty “full meal” variety. The men, you’ll find, want them on! - .
