What dessert could be more tempt- ing than a perfectly browned lemon pie? The following recipe. tested in the experimental kitchen of the De partment of Agriculture. can be re- lied upon: Two tablespoons cornstarch, three- fourths cup sugar. one cup boiiing water. four tablespoons lemon juice. one tablespoon butter, two egg yolks, speck of salt (about one-sixteenth of a teaspoon). grated rind of half a lemon. two egg whites and two table- 8poons sugar for meringue. Mix the cornstarch and sugar in a saucepan and Stir in the hot water. Cook. stirring constantly. until it thickens, and boil five minutes. Add butter, well beaten yolks. salt, lemon juice, grated rind. “Cook about one minute longer. Pour into crust pre- viously baked. Cover with a meringue made of the egg whites beaten stiff, then with two tablespoonx of sugar, and brown in oven. Sweet Corn Soup. Remove the corn from the cob, then put the cobs themselves into one gallon of boiling water and allow. them to remain until the water is re- duced to about three quarts. Remove them and substitute the corn. Cook the corn until it is £oft enough to be pressed through a sieve. After straining it season liberally with pepper and salt. then add three table- #poons of butter that have already been rubbed into two tablespoons of flour. and when the soup begins to thicken. with almost constant stirring add a pint of boiling milk or cream. When cooked & few minutes longer remove from the fire and add the beaten volks of two eggS. which will give the finishing touch to this very delicious soup. 4 Baked Apricot Omelet. .Cut six preserved apricots into dlce and heat up in a little fruit juiee. Beat.up five eggs. add a pinch ef salt and one tablespoon of sugar. Melt in an omelet pan or frying pan two tablespoons of butter. When het pour in the beaten eggs and stir over a quick fire until they commence to thicken. put in the prepared apri- cots, then shape quickly into an oval form by folding the ends. Allow the omelet to acquire a golden brown by putting it in the oven. turn out on to a hot dish, dredge with sugar and serve at once. 81 X Dt X i & 5 e it X St it X M 4 Pastry Crisps. This may be used by rolling thin. cutting inte squares, sprinkling with sugar and cinnamon and then baking unti] crisp. These do well to serve with sauce or other dessert. —_— Parisian Sweets. Use equal quantities of figs, dates and nuts. The nuts may be omitted and prunes or raisins added. Pyt through a food chopper, mix well and roll in a little powdered sugar or grated cocoanut.
