Without the help of birds it is doubtful that men could keep in- sects from spoiling crops, and without crops we should find it hard to live. Quite aside from the help they give in keeping down insect pests, birds are to be thanked for the merry music which they bring to our ears. Spring ‘without the singing of birds would not be the delightful season it is now. Years ago I made tests to learn what birds were the favorites of boys and girls. I found that the favorites were different in different sections. Robins, bluebirds, redbirds, orioles and mocking- birds were among the ‘leaders of differ- ent regions. Many a vote was cast for “the canary,” but I could tell by the letters that some children meant the cage canary and others meant the goldfinch, or “wild canary.” Tanaries kept in cages are, for the most part, descended from ancestors that lived in the Canary Islands or the Azores. ‘The goldfinch (also called “yellow- bird” or “thistlebird”) is from another branch of the bird family. During the open season the coat of the male is bright yellow, with black trimmings for the head, wings and tail. The plumage of the female is not nearly so pretty, being olive brown above and yellowish brown below. The female’s wings and tail are brownish black. As in other bird groups, it is the male goldfinch which does the sweet MENU FOR A DAY. BREAKFAST. Rhubarb Sauce. Wheat Cereal, Top Milk. Minced Beef on Toast. Coff LUNCHEON. When boiling put_into sauce a cupful of finely minced roast beef, one teaspoonful poul- try seasoning. pepper and butter. Pour over hot buttered toast. CHEESE SOUFFLE. Cook together in saucepan two tablespoonfuls butter and same of flour. When blended pour upon them one-half pint milk. Stir to a smooth white sauce and mix into this two tablespoonfuls grated cheese and pinch each paprika, salt and baking soda Have ready four eggs, whites and yolks beaten scparately. Remove Cheese mixture from firc an gradually beat in yolks of eggs Finally fold in lightly the whil beaten stiff. Turn mixture into greased pudding dish and beke in steady ovep to & golden brown. Serve immediately. SHORTCAKE. Two cups best bread flour, two teaspoonfuls cream of tartar, one teaspoonful sods, one-half tea- spoonful salt, one tablespoonful sugar, three-fourths cupful milk, one-half cupful butter, one ta- blespoonful thick sweet cream. Mix dry ingredients and sift twice. Work in butter with tips of fingers and add milk and cream gradually. Handle lightly on a floured board and divide into two parts. Pat, roll, cut lightly and bake 10 or 12 min- utes in a hot oven. When taken from oven spread with butter. Sweeten strawberries to taste, place on back of range until warm, crush slightly and put be- tween and on top of cake. Gar- nish with whipped cream. Wild birds which have learned the danger of cats slipping up on them or their young take pains to build their nests in districts where cats are not to be seen. Gold- finches have special reasons to guard themselves against danger from cats, because it is their custom to place their nests in bushes or in the crotches of low_trees.
