Make a white sauce with one table- spoonful of butter, one tablespoonful of flour and one cupful of milk and pour slowly over one beaten egg. Add a tablespoonful of salt. Mix this with one quart of cooked hominy, add half a cupful of fresh bread crumbs and form into croquettes. Thi: diet may sound dull, but you'll prob- ably pe hungry enough so that a dry soda cracker will look and taste like the most delicious food! Now for dinner. Clear soup or broth. This can be varied every day for flavor. It is filling and non-fatten- ing. For meat, "lean beefsteak, lean roast beef, roast chicken or lamb or mutton, & small lamb or mutton chop, or any fish but salmon. You can count 200 calories for this. One slice of bread with one pat of butter on it is about 200 calories more. You cannot have both potatoes and bread at the same meal, but you can have a medium sized potato instead of bread, since a potato is about 100 calorles also. Then you can have a large dish of any green vegetable, asparagus, string beans, cabbage, carrots, corn, celery, tomatoes, greens—and count it about 30 calories. You can have a salad, also, with French dressing or mayonnaise, only remembering that a dessert spoon- ful of oil is 100 calories. You can have a good sized helping of dessert if 1t is stewed fruit or plain pudding, and a very small helping if it is rich. Count your calories and you will see that you are well inside the necessary reduction ration. You could even have a cup of hot skim milk at bedtime if you are hungry.
