Spinach With Mushrooms. 11 pounds spinach 2 ecgs 1-4 pound mushrooms ? tablespoons butter. Wash epinach and cook in its own juice. Drain and chop. Beat e till very light with a dover beater. Mix spinach and eggs. Turn into a buttered baking dish. Cook mush- rooms in butter for 5 or 10 minutes. Season with salt and pepper and put the mushrooms and meited buytter on the spinach. Bake 15 or 20 minutes in & moderate oven and serve at once. A teaspoonful of lemen juice may be added to spinach when mixed with the egga Nut Sponge Oake. cup sugar cup nut meats cup flour 5 eggd 1 tablespoon lemon juice 1-8 teaspoon salt. Sift flour and sugar separately three times. Beat yolks of egga til] creamy. Add sugar slowly, beating all the time. Add nuts. Beat whites of eggs till stiff and dry. Add salt when starting to beat and when about half beaten add lemon juice. Add volks mixture to whites and carefully fold in flour. Bake in a moderate oven in an angel cake pan for 50 min- utes.
