Curled up in his splendid warm bed in a dead tree in the Green Forest, Timmy the Flying Saquirrel slept peacefully. He didn’t know that he had a‘ visitor. He didn’t know that on top of that same bed lay Whitefoot the Wood Mouse. Whitefoot wasn't asleep. No, indeed! Whitefoot was too worried to sleep. He knew he couldn’t stay in that fine house, be- cause it belonzed to Timmy. He knew that as soon 23 Timmy awoke he— Whitefoot—would have to ‘get out. Where should he go? He wished he knew. But it is the Jaw of the Green Forest that what- ever any one finds he may help him- self to if he can. So Whitefoot began to fill-his empty little stomach with some of those seeds. Timmy listened suspiciously at first, but soon made up his mind that Whitefoot was telling the truth. The mere mention of Shadow the Weasel made him very sober. He scratched his nose thoughtfully. “Over in that tall, dead stump you can see from here Is an old home of mine,” said he. “No one lives in it now. When It’s Old Apples. This time of year when the appe- tite needs coaxing, and also the time of year when certain standby foods fail to have satisfying taste. apples, for instance. We are tired of the rather flat apples that are for the most part in the market now. We crave the tart, fresh-tasting apple of August. The only thing we can do is to doctor up the apple we can get now and so make it a little more interest- ing in taste. For one thing, take apple sauce. By judiciously adding whole cloves, lemon peel, orange and lemon juice, we can give a sharpness and deli- clousness of flavor to even the flattest, oldest apples. Spiced Apples. —1 Split and core sweet apples, stick & a few cloves into each half, put into a buttered baking dish, sprinkle with sugar and spice, dot with butter, pour a little water into the pan, 2nd bake in a moderate oven. Serve either hot or cold. Steamed Apples. Fill an earthen dish with alternate layers of peeled, cored and sliced ap- ples, and brown sugar. Add a little spice if desired. Steam until soft and serve hot. Baked Apples. Peel and core the apples and bake, basting frequently with melted but- ter and sirup flavored with lemon red fand spice. Serve cold with cream. Stuft the cores with powdered sugar |5t if desired. Jellied Apples. Select tart, juicy apples; pare and remove core with a corer or narrow- bladed knife. Place in a saucepan with -boHing water, half enough to cover them, putting a tablespoonful of white sugar into each apple. Cook until ‘they are well done but retain their form; then remove to. the dish from which they will be served; to the juice add sugar in proportion of a half a cupful of sugar to half a pint of juice to make a jelly, which pour over the apples. If a few pieces of the apple peel be stewed in the Juice then removed.- before putting in the s it will give the le‘;l‘;r glve a nice. color to Prune Layer Cake. Make a plain layer cake and the following filling: Stew a qulr‘:: of a pound of prunes until soft, pit and rub them through a coarse sieve. Soak two tablespoons of gelatin in a little water and when soft add it to the boiling prune juice, together with & half cup of sugar and the same quantity of canned rhubarb or pineapple juice. Just before it sets l;'e)ll't ln&o the mlxl:re half a cup of pped cream and sprdad betw the layers of the cake. o Steak in Gravy and Rice. Cut one pound of round steak into four-inch squares and fry them until nicely browned in hot lard. Take out the pieces of steak and add one- fourth cup of flour to make brown gravy, then add one-half cup of finely chopped onion, one-fourth of & lemon sliced thin, .the meat, one clove and a seasoning af salt and pepper.
