eye Toss Smoking Meat. Wot a little has-been written on the subjectot preparing meat, in the best possible manner for | lomestic purposes, previous 10 placing itim the smoke-house, bat litle or Mm ng has been said of the manner of smoking it. To appear- ance, it has been taken for granted, that this rocess, (so important in itself, and that it be | Rone with care) could be performed by any one, | ‘who knows enough to buildafire. Those, whe have eaten bacon smoked as it should be, and afterwards partaken of that which has been seorched, heat, burned to'a crust om the out- side, as is too frequetly the case with the most of le, will detect a remarkable difference; an en denounce the latter kind as fit for aothing but soap grease. The process ofsmok- ing meat should never be left with those who have nota facuity of exercising proper care ‘and judgment in this business. ace, seven times hotter than it ought to be heat- ed; a smoke, sufficient to fill the space cooupied | by the mest, is the great desideratam. heaps, backs-logs aud fore-sticks should be dispensed with, becauce after they get once on fle, there will be too great a degree of heat. And besides this, in weoden smoke-houses, there is great danger of setting everything . on fire. Such imstances I have known to occur; anc loss ef the meat was the consequence. ‘The best, mosteffectual, cheapest and neatest manner vf smoking meat that has ever come unoer my observation is, to a shovel of live corls in & pan, orsome low g@ish, andlay on them a few sugars maple chips. Dry ones are the best, for itregquires too much fire to use green ones sweet smoke as sugar maple; and the coals of it will keep alive as long, or longer, than the © als.of other wood. In the absence of chips we | use corn eobs, which are nearjy as good as chips. Timee or four !aid on a tew coals will produce erent stflicient to fill eny ordinary smoke- jouse. Asacubstitute fora smoke house, we have been accustomed to use & molasses hogshead, covered with board on the top, and a sawed in the side near the bottom, large enough to admit asmall pan of coals, with acobor two, or a few small chips. Thus we avoid all danger of setting fire to the smoke honse and consuming meat and all; and our meat is not “half baked,” but presents a clean, copper colored appear- | ance. Let -thoce, who have been accustomed to smoke their meat over & log heap, adopt the mode of smoking it gently; and then say which | way is the best — ?ultivator.
