All the world, even to the remotest bounds of civilization, has heard some- thing of the extent and wonderful perfection oi the great mills of Min. neapolis. Tts hest flour is everywhere a synonym for perfection, and it Is tho largest and costliest of these mills and the most famous of theze grades of floar, that the scribe is about to dercribe, or rathar to inscribe the few lines pressribed for the exercisc of his “'serlbendi.” A. H. MAYNE & CO. have secared the wholedale and retail agency for the Pirussuny MiLLs, and their cflize st 34 Pearl street ie already the Mecca towards which the neekers after perfect flour lift their eyes when they eay, ‘‘Give us this day our daily bread.” And now that we have daly intrc- duced the subject, let us TALK BUSINESS, The flour is made from the Choices? Selected Hard Minnesota Spring Wheat, in the tamous Pillsbury Milis at Minneapolis, Minnesota, and 1s branded These mills are five in namber, with a_capacity of 7,600 bbls. per day, or over 2,000,000 per year. To feed these mills requires 10,000,000 bush- els ¢ f wheat annaally. The Pillsbury A mill, just completed, has the largest capacity of any mill in the world, con- suming over 20,000 bushels f wheat por day. It is supplied with the best machinery known to (!\0 milling trade, no expense having been spared to sure perfoction in all detsils, and it without doubt the mest pesfeet costly mill on the globa, Thoy guaranteo their ¢ Pillsbury’s Best” to be the choicest flour made in the United States, taking all its li- tics into accountr Among tF my put forward in 1ts bebalf, we find the following, and we can vouch for their correction: “T¢ will yield from 40 to 60 pounds | ard more bread’ to the barrel than flour made from winter wheat, It requires more moisture in mixing, and the bread will keep sweet and moist for several also the moet nutritious and healthy, a8 it is absolutely pure, nothing but the choicest hard spring wheat belng éoDNOXL éLUpis lv;AlLROAD used in its manufaciure. At the eame timo this flour will make the whitest, lighteat loaf of bread in the world, being at once the best, cheapest and healthiest flour that can be used, and without a doubi CPILLSBURY'S BEST IS THE BEST.” A few directions for making bread may not come amiss, To one quart of milk or water add two-thirds ct a teacupful of yeast; add flour to the thickness of batter, and let it rise over night; then add flour enough to knead softly twenty minutes, or until it will not cling to the board: let it riso in the pan, then make into small loaves and let it rise again, Bake in s moderate oven Be suro and not let it staud in the oven after iv ia done, and the result will be » most beautifal, eweet, white bread. The flour will work very much better by thoroughly drying it cut. Lot it set on the back of the stove, or some other warm place, twenty- four hours, and you will be surprised at the differenca it will make in either bread or cake. Some good cooks keep a lot of dried out flour on hand all the timoe and regard it a great secret, DIRECTIONS FOR MAKING THE BEST YEAST, Boll a handful of hops in two quarts of water ten minutes, then strain, and to the liquor add aix good sized grated potatoes, one cup of sugar and one tablespoonful of salt.
