MOLLENDO, Peru, February There is no excuse for Mollendo. ‘Why anybody should go to the trou- ble of hanging a city on the edge of a few formidable rocks passeth all understanding. Whereupon he sank sadly into a chalr and fell into a fitful slumber that reflected his Latin emotions in the expressions of his face that seemed to change with every bump of the train as it went lurching along up the foothills of the Andes. What a rough train! It is rougher and harder than the Way of the ansgressor. You never heard him drum better, yet he isn't on a hollow log.” “I know better!” retorted Peter, beginning to lose his temper. “Why., ever since T was big enough to wab- ble my nose I've known that Thun- derer uses a hollow log for his drum- ming. 1 didn't suppose there was anybody living in the Green Forest who didn’t know that.” “Still, I say that he isn't using a hollow log for his drumming now, and, what is more, he very seldom does,” insisted Jumper. Vell, all T can say is that for one who has lived all his life in the Green Forest you don’t know much,” as- serted Peter. “What I know I know,” retorted Jumper. “I don't swallow whole every tale I'm told like folks I might mention. Have you ever seen Thun- derer drum?” Peter was forced to shake his head and say that he had not. “Well, I have,” declared Jumper. “I have seen him many times.” “T've seen the hollow log he uses,” declared Peter. “Did you look to make sure that it is hollow?” demanded Jumper. No—o,” confessed Peter reluc- tantly. “But it is so old it must be hollow,” he added. Jumper merely grinned. “You are talking about something of which you know nothing,” said he. All these wonderful hypo- phosphites, glycerphosphites and other phosphorus combinations are Just applesauce—nay, a teaspoonful of applesauce contains more phosphorus for the body. The phosphorus compounds in the body, particularly the phosphates in the blood and protoplasm of other tis- &ues, enable the blood and tissues to remain neutral or faintly alkaline, in spite of constant production of acia products of metabolism. Cheese, any kind, is of great value, therefore, in the diet of one with a tendency toward acidosie, Acidosls is a state in which the neu- trality of health is lost and an excess of acid products of metabolism is formed or retained in the blood and the tissues. It has nothing to do with real or imagined ‘acidity” of the stomach. It has nothing to do with the question of eating acid fruits or vegetables. The liberal use of acld fruits and vegetables opposes any tendency toward acldosis, as a rule. Acidosis is a feature in many disease conditions. The principal acid sub- stance concerned in acidosis is carbon dioxid. the gas given off by the lungs. Cheese is too often avoided by ill- informed folk who imagine it is “in- digestible” or “constipating.” It is neither. There is no food substance of equal food value more easily or readily digestible than cheese, There is no-food which constipates.
