F Serving a Simple ) ‘Thanksgiving Dinner Hven if it Is your custom to have ! a acoording to the Russian style, no viands on the table save those set before each diner ‘Way, you will surely want to go back tor the old-fashioned custom on sgiving day of having the ta- 3 bl iden with the feast as part of the' holiday decoration; and even thdugh you may have a butler much mere expert at carving than the man ©of the house, he will, on Thanksgiving day at least, take his place at the head of the board with carving knife and fork in hand to do honor to the turkey. In other words, the best idea is to have the table set for English service on Thanksgiving day. At the left side of each place you should have one or two forks, de- pending on the nature of the feast. #nd at the right the knives. The forks should be laid with the prongs turned up and the knives should be lald with the sharp side toward the vlate, or inside. If you are going 0 serve soup, the soup spoon should be just at the right of the knives. You are going to begin the meal with a fruit appetizer, such as grapefruit. which is a _good idea when a heav: meal is to follow: you should have #poon placed beside the knives for | that. Just at the tip of the knife or knives the tumbler is placed and at the left of the tumbler is placed the bread and butter plate, if you really feel that you cannot dispense with bread and butter. On the bread and butter plate is laid the small bread and butter knife. If you are having a meal with only @ few courses, then the fork that you will need for the ple or other dessert should be at the place to begin with, but if there are many courses, then ; it is not customary to place the des- rt fork or spoon to begin with, be cause too great an array of table silver appears unwieldy. Coffee spoons, if after-dinner coffee is served, are passed with the coffee. you are serving salted nuts, then they should be placed at the indi- dividual piaces in little individ- val dishes above the fork. The napkin is removed from the service plate and the soup plate laid on it after the guests assemble. If soup is served from the kitchen as a | first course, it should be on the umel | when the guests arrive, the napkin being laid to the right of the knives. 1f a fruit appetizer is the first course, then this is served in suitable dishes on the service plate, with the napkin beside and it is alteady in position when the meal begins. Tsually such accessories as celery, cranberries, pickles and jelly are on the table when the meal begina. Just befors the main course is served, a pile of plates with the freshly sharp- ened carving knife and the carving fork are brought to the host. If there is no maid, then these can have been placed beside the host's place before the first course. The platter is then brought, bear- ing the turkey or other roast, and if there is no servant usually the vege- tables are placed on the table with suitable serving spoons and are either passed around by the guests after they receive their plate or one of the members of the family serves these dishes as_the plates are handed to her for that purpose. Where there is no maid, gravy is placed on the table In a gravy boat and is passed around by the diners. Even where there are no servants it is mnicest to clear away all accessories, such as salts and peppers and celery and cranberry dish, before dessert is serv. Then the ple and pie plates and dessert forks are placed before the ‘hostess, with possibly a plate con- taining small pieces of American cheese. The hostess cuts the pie, it 1s handed to the guests and the cheese is either passed by a servant or passed by the guests to each other. Scalloped Eggs and Meat. Mix together in a dish four table- #poons of chopped cooked meat, four tablespoons of bread crumbs, and salt, pepper and paprika to taste. Put aside three tablespoons of the mix- ture. Melt one tablespoon of butter, and add to It the rest of the mixture, with one-half teaspoon of made mus- tard and enough milk to mix the whole to a stiff paste. Have ready a buttered, scalloped shell for each egg. spread each shell thickly inside with | he paste, leaving a hollow in the) center of éach in which to put an esg. RBreak an egs carefully into each hol- Jow and shake a little of the dry mix- iure over the top of each egg; put a fow small ‘pieces of butter here and there on the top of each egg, put them in the oven and bake them until set; serve hot. Savory Egg Omelet. Break four eggs into a dish, add one tablespoon of cream, one tablespoon of butter broken into small pleces, one tfeaspoon of chopped parsley, salt. pep- per and paprika to taste, and a few drops of onion juice. Beat the eggs Wwell. Melt one tablespoon of butter o 8 pan, pour in the mixture and stir it around with a wooden spoon. Di- rectly it begins to set turn It over ato a half-moon shape, allow It to brown, then turn a hot dish over it Serve at once. —_— Napoleon Tarts. Put one-half ounce of chocolate in the oven to soften. Cream one-fourth pound of butter and one-fourth pound ¢ sugar, 2dd the yolks of four egs, beating them in well, then the melted chocolate and one ounce of bread crumbs. Mix thoroughly. Whip the Whites of the eggs stiff and mix in lightly. Butter two molds, sprinkle crambs over and bake in a hot oven. SWhen done, turn out and cool. Whip the whites of two eggs stiff, stir in three ounces of sugar and spread on one of the baked rounds. place the other on top and serve. Enough for six persons. Prune Jelly. Stew one pound of prunes and one pound of canned rhubarb together, adding the rhubarb when the prunes are nearly cooked. Sweeten to taste and rub through a coarse sieve, re- turn to_the fire, and when boiling add three tablespoons of gelatin which has been soaked in a little cold water. Pour into a mold and allow b it to set. Serve with whipped cream that has been sweetened and flavored. Rich Ginger Pudding. Mix together, with a wooden spoon, two tablespoonfuls of flour, one-half pound of break crumbs, one and one- half teaspoonfuls of powdered gin- ger, one teaspoonful of baking pow- der and two tablespoonfuls of sugar. Add two eggs, one-fourth pound of peef drippings, one tablespoonful of golden sirup, and enough milk to moisten. Put into a greased pudamg .un. which should be full; cover greased paper and steam for t.hul bours. Baked Creamed Eggs. Bofl six eggs and cut into slices. Make a sauce by creaming one level tablespoontu] of butter with two and one-half tablespoons of flour and ng one pint of cream or milk.
