Among our many readers there may be afew who are Boi to take the trouble to make a right royal dish of a fowl which is very com- monly desp'sed as untit forthe table. For their benefit we offer the following rec’ ‘derived from a chef de cuisine who isa FF schools of Paris at St. Petersburg. Select a young and healthy , well grown and in his lirst feathers. Feed him for one week on well- cooked cornmeal dough or stiff mush, and give him the free ran of the yard, with its sweet graes and abundant fresh water, to keep his liy- erin order: for you are not contemplating a ate. Then for two weeks feed on thoroughly iled rice. If chopped celery or paraley be mixed withthe rice, so much the better, but the rice alone will answer. Our bird is now ready for the kniie. Knock him on the head, and cut his throat tenderly, being careful to let him bleed freely. Craw him without removing the feathers. Then in place of the intestines, insert a large herring (Labra- dor preferred), wrap him in several folds of old linen or cotton cloth and bury him for five days under at least three feet of good clean clay soli. At the expiration of the five days exhume him, Temove the herring throw it as far as the strength of your arm will enable you to send it, or, better still, bury it from five to seven feet feet out of sight and smell of yourself and Next pick it hit ih him i ext pick your goose, singe him, wash him in many waters and wipe perfeetly dry. Put him then into a kettle, cover him (barely) with cold salt water, and let him boil gently for an hour or an bour and a quarter. While the is in process prepare the dressing as fol- : ‘Take of best pippins (other apples will serve, though not so well) a sufficient qaantity peel and core them, stick afew cloves intoeach and place @ small fiake of mace in each co When the goose kas been sufficiently boiled. | and of this the cook mast judge by inspection— cenery. | take it from the pot, drain carefully and fill with the prepa.ed apples, the liquor in which it was boiled being inthe mean time concentrated ag rapidly as possible to about one-fourth of the original quantity. Lay the goosein an old- fashioned oval Datch oven, Placing more ap- ples around and over it, pour on the liquor, cor- er closely, and apply a gentle fire of cleat live coals over, under and around the oven for from four to six hours, according to the size of the goose, and until it is thoroughly done. Rte done, =. and invite aset of ew good fellows to help you eat your geose. It w cea ingly feast.
