It was stated some days ago in Tue Star that Sanitary Inspector yneral Gatcheil had caused warranis to be issued against some twenty-live butckers doing business in the Center mark the charge of selling blown, unsound anc wholesome meat. They appeared before the Police Court on Saturday to answer the charge, and as this is am interesting «abject to all who eat “sheep meat” or veal, it may be well to Geseribe the different modes of blowing meat, and the effects it is said to produce, as set the exam- forth in the testimony elicited duri: mation. When the animal is killed the body is yet warm, a steel is inserte: the suculder and rib, which penetrates inte the eavity of the stomach, and the legs are all premed outwards, collapsing the carcass as much as possible; the steel Is then withdrawn andthe legs are’ loosed at the same moment when they resume their nateral position. The air is drawn in at the aperture made by the steel in this manner, and all the cavities of the bodg.are filled. So far, this process is thought not to be injurious to the meat; bat whem the avimal killed is i a lean condition, it is ing @ quill or metallic the ineision made by the steel, lowing the breath throngh into the vities, it gives the meat a plamp ince which is calculated to deceive the Purchaser. The medical faculty assert that while the carcass of a sheep or cali thas slaaght ered and filled with air, is warm, the air is taken Up by the tissues and communicated to all parte of the animal, and that if the batcher or “blow- is an unhealthy man or di 1, that his breath contaminates the meat Tenders it seased and unhealthy. Whether althy lower or not, the practice is a disgustimg one, and shenld be stopped. This practice is said w Rave prevailed rot long ago among poultry deal- €:s, to give turkeys a plump appearance, and the stories told about it nearly finished up the poul- try business for a long time. Their bames are as follows: Join Ferguson, Kengla, W. A. Munder, Robert Smith, Soneph Weyrick. James Green, G. R. Kaufman, W. T. Poore, George Cooper, S. S. Coggin, John Eggleston, J. J. Lightfoot, G. W. Yeabower, D. M. Lightfoot, L. Zeller, Brown, Warthen Bros, Theodore Burns, Henry Stevens, A. P. Homiller, F. E. Shoemaker, J. 4. Glick, W. F. Kengla, A. P. Emrich, and Jacob Apprich. ‘They were arraigned separately, the clerk read- ing cach charge to the accused, and each one pleading for himself. Most of them ploaded guilty to that part of the charge referriog to bewn meat, but denied that it was unsoged or unwbolesome. Mr. Hine, counsel for the defence, demurred tw the language of the charge ax set forth in the warggnts, and made a motion that all be quashed. ‘The Judge overruled the motion, and the case of Jobn Ferguson was called first. Mr. Munder, a meat iaspector under Mr. Gatchall, testified to going the rounds of the Center Market on the ith instant, in eompany with Mr. Gatchell and inspector Franklin, to examine the quality of the meats exposed for sale. Mr. Miller, counsel for the District, reptied saying he had plenty of testimony yet to intro- duce which would show the deleterious effects of this digusting practice. The court reserved his decision until al! the cases are heard. —— Our Fire rtment. ITS CONDITION AND NEEDS. ‘The Board of Fire Commissioners in their co munication to Gov. Cooke, which be transmitted to the Legisiative Assembly on Saturday, refer to the recent terrible conflagration ia Chicago as a warning to other cities to provide every ble rafeguard against the occurrence of similar dis- asters within their borders, and then say: “ Our engines, as a general thing, are in good condi- tion, and our men, with few exceptions, zealous and active; but our yp ae 4 is spread ever a large area. The Governor has ordered work to be resumed on the new public school building at the corner of 12th and G streets southeast. The members of the Board of Health held an informal meeting on Saturday evening, at which the subject of asking the Legislature to pass the bill presented at the last meeting of that body, in regard to vaccination, was discussed, and also the bill concerning iInterments.
