Never put them in cold water. but plump them into that which is boiling briskiy. This will coagulate the albumen on the outside, close the pores, and prevent the water from soaking outthe rich juices. If salted meats need freshening. let it be previously done with cold water. taking all needed time, with fre- fade changing of the water, if it is very salt. ongb, cheap pieces of beef can be made ten- le as follows :—If salt, freshen into the pot with a trifie more water than will be finally needed. Set into the top of the coeking pot a closely fitting tin plate or pan, and fill it with cold water. If this gets boiling hot, dip cut some and add cold water from time to time. Boil the meat Until it gets so entirely tender that the bones will drop ont, even if it takes five or ten hours. Fhe stetm and aroma or flavor of the meat will be condensed on the bottom of the covering pan or pail of water, and drop back, and thus be retained. When thoroughly done, Temove the cover, and slowly simmer down thick enough to jelly when cold. Dip out the meat, remove the bones, place itin a pas, pour over it the boiled liquid, lay over ita jarge plate, or inverted tin plauter, and put on 15 to © pounds weight. When cold, it will cnt into nice slices, and if lean and tat or white meat be mixed, it will be beantifuliy marbled. The juice will jelly and compact it firmly together, and you will Rave nice jnicy meat, good for | breakiast, dinner or supper, and so tender that poor teeth can masticate it. Fresh beef, or orned beet well freshened in cold water, may be used in this way with decided economy, and is far fuperior to meat boiled in an open vessel from which the flavor bas constantly escaped, as you can per @ by the odor all through | the house, if Bridget leayes tbe kitchen door open A minute or two,as she will certainly Bappen to do.— Am. This, in many cases, wiil be sufficient; yet there are icetauces when this will notanswer. In sueh a case take a cotton or lint, well soaked in oe alee Water, rolled up in a bard wad, and press it firmly up the ca: of the tooth. so as to reach the mouth of the ling vessel, and &t the same time close your teeth upon and compress it so as to retain it in that position, where it should be kept from two tu twelve hours without being removed.
