EVENING STAR. | Waste and Want. | Moch waste often occurs in the boiling of | . The cook will throw out the water | withont letting it cool to take off the fat, or» scrape the dripping-pan into the swill-pail. The grease is tsefal in many ways. It can be burned in lamps, mixed with lard, or. when no ‘k bas been boiled with it, made into candies. Bits of meat are thrown out which | would make hash. The flour ts sifted in a ‘wasteful manner, or the bread-pan left with | dough sticking to it. Pie-crast is laid by to sour instead of making & few tarts for tea. Cold puddings are considered for mothing, when often tmes they might be steamed for thre next day. V are thrown away that would warm breakfast nicely. Dish- Cleths are thrown where mice can destroy them. Soap is left in water to dissolve. If*Bath brick, whiting, rotten-stone, etc. are used, much is wasted uselessly. The serub-brush is Jeft in water, pals scorched by the fire, tubs Jeft in the sun to dry and fall apart, chamber- pails allowed to rust, tins not dried, and iron- ‘ware rusted: nice knives used for cooking in the Kitchen, silver spoons used to scrape kettles, or forksto toast bread. Cream is allowed to mould and spoil, mustard to dry in the pot, and vinegar to corrode the castor; tea, roasted coffee, pepper, and spices to stand open and lose their strength. The molasses jug loses its cork, and the flies take possession. Sweat- Meats are opened and forgotten. Vinegar is drawn in a basin and allowed to stand till both basin and vinegar are spoiled. Potatoes in the cellar grow, and the sprouts are not removed until they become worthless. Apples decay for wantof lookingover. Pork spoils for want of salt, and beef because the brine wants scalding. Hams become tainted or filled with vermin for want of the right protection. Dried beef becomes so hard it cannot be cut; cheese Moulds, and is eaten by mice. Bones are burned that would make soap; ashes are thrown out carelessly, endangering the premises and being wasted. Servants leave a light burning im the kitchen when they are all out of an evening. Oloths are whipped to pieces in the wind, fine cambrics rubbed on the board, and laces torn in starching. Carpets are swept withstumps hardly fit toscrub the kitchen, and good new brooms used for scrubbing. Towels are used in place of holders, and good sheets to iron on, taking a fresh one every week, thus scorching nearly every one in the house. Table-lnen is thrown carelessly down and eaten by mice, or put away damp and is mildewed, or the fruit stains are forgotten and the stains washed in. Table-cloths and nap- kins are used as dish-wipers; mats forgotten to be put under hot dishes; tea-pots melted by the stove: water forgotten in pitchers and allowed to freeze in winter; and china nsed to feed cats and dogs on. In many other ways a careless and inexperience housekeeper will waste her husband's wages, while she thinks, because she buys no fine clothes and coc plainly, that she isa “most superior house keeper.” —Haskel’s Household Enciopedia. OUVTRAGES AT BEAUFORT.—We learn that the colored troops of Beaufori, in this Stare, have recently been guilty of shocking outrages in the neighborhood of that place. A squad of them visited the town of Beaufort a few days since, violated the police laws, were arrested = Mayor Duncan, and sent to Fort Macon in charge of some of the town police. When the police officers reached the fort they were threatened by the colored troops, disarmed, and thus allowed to return to the town. Some of the negro soldiers, we learn, threatened to turn the cannon of the fort on the town of Beaufort. But this is not half. A few days since a uad of these soldiers went to the house of a white citizen not far from the fort, and while the man of the house and his wife was held, they ravished their daughter, a girl of fifteen years of age. Another squad went to another house, and attempted a rape on a child ten years of age.—Raleigh (N. C.) Standard. S7 The Richmond quirer says “agitation of the question of imposing a specific tax upon Jeat tobacco has filled with alarm and perplex- ity the mind of our planters, the mass of the pulation of the shipping tobacco section of irginia, and the class which represents, per- haps, the most important industrial interest in the States of Virginia, Kentucky, Maryland, Tennessee and Missouri. The European to- bacco market, is supplied from almost every quarter of the globe: and to give the foreign producer over our own an advantage of ten cents per pound (which is as much as the cost of production), is equivalent to laying an em- bargo on the exportation of tobacco by us.” B7-“ Warrington” relates a story, which Tom Corwin used to tell about a horse jockey in Lebanon Obio, who hada rule «never to lend amana dollar unless he would put down two Spanish milled dollars as security.” The jockey’s three main rules tor life. however, were first, “never refuse to drink with a man, becanse it won't cost you anything:” second, «never ask a man to drink, because it will cost | ou something, and might lead the man into id babits;” third, “never mind what happens 80 long as it don’t happen to you.” &7 The wheatcrop in the Western States for *65, amounts to $145 522,520 bushels.
