Butter that is made in September and Octo- ber is best for winter use. Lard should be hare and white, and that which 'is taken from @ hog notover a year old is best. © Rich cheese feels seft under the pressure of the finger. These articies, and tapioca, ground rice, ete., Ehould be kept covered. The cracked cocoa is the best; bat that which is put vp in pound papers is often very good. To select nutmegs, prick them witha pin. If they are good, the oil will instantly spread around the puncture. Keep cotfee by itself, as its odor affects other aricies.
