One shell struck but a short distance from the Yankee, in direct range with her wheelhouse, Most of the ahots were too high for the Anacostia, Jnany of them passing over her to a great distance. ‘The heavy guns of the Yankee enabled her to lay off out of range of the rebels and drop her shells with precision into the batteries. After firing some time, the steamers hauled cit, ‘without being struck; butit Is believed that from the manner in which the shells exploded in and around the rebel works, that ‘‘semebody {s hurt.”’ ‘The cars can be seen running to and from the depot at Aquia Creek, and it is thought that the Rebels are removing their stores, ordnance, &c. The merits of this Bread have been attested by many of the most eminent and enlightened men of the present age, Including (among other dis- tinguished names) Gen. Scott, Gen. Dix, the San- itary Commission, Prof. Bache, Miss D. L. Dix, Fred. Law Olmstead, Prof. Silliman, &c. Also the following well-known gentlemen : From Prof. Torrey. “The Bread made by this process is of admira- ble qualities—being light, entirely free from all unpleasant taste and odor, and holds its moisture longer than any other baker’s bread that I have seen. It is perfectly wholesome, and I hope it will come into extensive use. Jonux Tonner, Prof. Chemistry, U.S. Aesay Office.” { have for some weeks past been using in my family the Aerated Bread, made by Messrs. Re- qua & Co., and I prefer it to any other bread, either of domestic or bakers’ manufacture. In lightness, whiteness, and sweetness it can- not, in my opinion, be surpassed. {have also examined the process by which it is now made in this city, and am satisfied it pro- duces a purer and cleaner loaf than is made by any other method. Jno. Farep’x May,M.D. ‘WasHincton, 28th February, 1862. I concur with Dr. May in his appreciation of the Aerated Bread of Requa & Co. A. D. Bacns. Wasutxeton, D. C., March 7th, 1962. Since the introduction of the ‘ Aerated Bread”? of Messrs. Requa & Co., { have had frequent op- portunities of testing its merits. Having advised its use among my dyspeptic patients, I have uni- formly been gratified at their reports of its dizes- tibility and general agreeable qualities. The peculiar principle involved in its manufacture, and the absence of everything but the pure, es- sential ingredients, render this article peculiarly useful to physicians. Perhaps ene of the most frequent causes of dyspeptic discase, in this country, is the almost uniformly bed character of the bread eaten by our people. Thus, either dosed with chemical agents, to blanch the ma- terial used, or to leaven the mass, the stomach receives a food which can only be assimilated fectly cleanly, an@ yields bread which contains only flour, water, and salt. 1 bave used your bread in my own family for some time, and have uniformly found it sweet and wholesome. It keeps fresh and moist longer than ordinary fer- mented bread. { cordially recommend it as well deserving public attention. Your obedient servant, Wotcorr Gians. Prof. Chemistry and Physics in the Free Academy in New York. Letter from Professer J.B. W. Dunbar. I have been present at the preparation of the Aerated Bread at the establishment of Messrs. Requa & Co., and am entirely satisfied of the purity of the articles used, and the grent care and cleanliness employed in its maivfacture. 1 have also given it a fair trial by using it for some time, and am prepared to give a reliable opinion as regards its qualities. In the process of making nothing is used that is not Dealthy, and the nutritious properties of the flour are pre- served, and the natural sweet taste greta ined. The Bread is beautiful, white, spongy, light, and easy of digestion. These qualities recom- mend it to gencral use. But we think it will be found to possess peculiar claims to those who are dyspeptic, and of great value to the great n ber of persons who are thus affected. From a very careful examination, { feel unusual freedom in commending this Bread to the favorable con- sideration of the community, J.R. W. Donsar,M D. Baltimore, Aug. 27, 1°61. “Yate Prec e New “tah ay Nevember 15, 1861 “(1 have long been familiar with the process of making bread light by Aeration. “The common notion that the process of fer- mentation is essential to prepared digestible bread, by some change effected by it in the starch globules, is effectually set aside. The experience at the London Hospital shows that this Aerated Bread is digestible without incon- venience by stomachs which wholly refuse fer- mented bread. Whiter, sweeter, lighter, more digestible bread, and more from a given quantity of flour, is made by this process than by fermen- tation—while entire cleanliness and the absence of all deleterious substances are secured at the same time. Nothing but salt is added to the prste—the carbonic acid escapes in the baking. I have eaten this bread for a considerable time, and at intervals for many months, and always with satisfaction. Dry toast made from this bread has a delicacy of flavor not found in any other bread [ have tasted. B. Situimay, Jr.” A New Kinp or Bazad —Who does not ap- preciate good, light, and wholesome bread?
