16 ‘TE bUNDAY, BUTTER YS. LARD. : How t-e Fine Creamery Is Fixed Up with Pizs’ Fat. Cheese Comes In for Its Share of Adulteration. An Urgent Necessity for Some Stringent Lawmaking. The honest portion of South Water street has been in arms for sometime past over the dis- covery that a new substitute for butter was be- ing sould in this city, but the fear of “injuring the trade” operated as a restraint, and the com- mission merchants who have consciences and desire to dea! fuirly with customers made no move towurd putting an end to the imposition. When, however, it became known a couple of months aso that checse also wus being adulter- ated, some of the Eigiu men who do business in Chicago came tu the conclusion that, if nothing were doné, iegitimate trade would be ruined. One of them, therefore, told whut he knew ata meeting of the Elgin Board of Trade, and that body appointed a committee, consisting of Cherles Baltz, Dr. Joseph Tetft, and S. A.
