These figures were determined fol- lowing a survey of establishments covered by minimum wage order No. 1 for public housekeeping which showed there are about 2,158 hotels and cafes in the state employing ap- proximately 7.000 women, she said. 11,620 Companies Covered Another survey by the department disclosed there are a total of 11,020 establishments in the state covered by the five minimum wage orders, in- cluding public housekeeping 2,1! manufacturing, 1,648; mercantile, 6,- 601; laundries, 330 and telephone companies 283. The survey of public housekeeping wages showed the average wage of a waitress to be $2 above the weekly minimum; for cooks almost double the required minimum and for kitch- en help with board $2.47 above the weekly minimum requirement, Miss) Dupuis reported. Below the required minimum by $2.73 was the average weekly wage of maids receiving no other compensa- tion she stated. “These wages are based on a 48- hour week whereas taking the total of all data received under this classi- fication” the secretary said, “we find that the average hours worked per week is 59.” y Reports From 715 Firms Figures based on reports for 715 firms and 2,309 employes, showed the following weekly average wage: Cooks—With board and room, $13; with board $13.75; kitchen help—with board and room, $5.58; with board $10; maids—board and room $4.75; board, $8.63; room $11.25; with nei- ther board nor room $10.03; waitresses, with board and room, $8.17; board, $10.54; with neither board nor room $12.50.
