Manuafcturers are carrying on an unceasing drive to make refrigerators better at lower cost, with the result that each year refrigerators become a more essential part of every econom- ical home. Electric refrigeration not only saves money but safeguards health. Through electric refrigeration, men have learn- ed to live better and cheaper. As a! result, domestic refrigerator sales in 1935 increased 318% over domestic refrigerator sales in 1921. Thus, in spite of the worst depression the world has ever known, electric refrigeration moved forward. Sickness Is Reduced It is interesting to note that in an era of economic reverses, public health departments throughout the nation reported less sickness than in normal years. Undoubtedly, electric refrig- eration played an important part in improving the health of the nation, not only in homes but also in packing houses, stores, trucks, trains, wher- ever the problem of handling fresh food must be met. Today, electric refrigeration is no longer a luxury, it is a necessity. Con- stant never-failing cold provides a new standard of refrigeration service. For centuries, men have invented con- trivances for the cooling of their wines and the preservation of their foods. Electric refrigeration meets every cooling requirement more satisfactor- ily and with far less trouble and ex- pense than any other method known. Its adaptableness to all requirements has been fulfilled by new improve- ments and developments which have contributed toward new perfections in the art of keeping food safely. The fundamental of any electric refrigerator is to prevent spoilage of foods, to insure the safety of perish- able products and to save waste. Gov- ernment regulations supervise the care and production of food stuffs outside the home but the responsibil- ity of the government ceases when the responsibility of the housewife begins. Temperature Most Important To maintain the quality of foods, keep them cold. Temperature plays the most important part in controlling the development of microorganisms in food. If meat is not properly stored, it becomes unpalatable and harmful. Toxins are formed and decomposition sets in. Ptomaine poisoning may re- sult. Bacteria play hob with food. Under favorable conditions, a single one can multiply at the rate of a billion in 15 hours’ time. At a tem- perature of 50 degrees or below, per- ishable foods are always safe from contamination. At low temperatures, germs cannot thrive and multiply. Subjecting foods to refrigeration re- moves the heat from them and from the air in which they are surrounded. How cold foods are kept depends en- tirely upon how much heat is re- moved. The efficiency of any electric ref- rigerator depends largely upon its in- sulating qualities. In most new 1936 refrigerators the thickness of insula- tion has been increased. New methods of application have also been introd- ucei. In fact, to make more efficient eieciric refrigeration equipment for home requirements is an unceasing task.
