FOHSOOSHOOOD PASTEURIZING (ereczine NITED STATES DEPARTMENT OF AGRICULTURE, Bulletin 342, says: “Meaning of the Term Pas- teurization— The term ‘pasteuri- zation’ originated from experiments of Louis Pasteur, in France. From 1860 to 1864, in experiments on ‘diseases’ of wine, he found that heating for a few moments at temperatures of from 122 degrees to 140 degrees F. was sufficient to prevent abnormal fermentations and souring in wine. A little later he found that by a similar heating beer could be preserved from souring. Application of the process gave rise to the term ‘pas- teurization.’ As applied under commer- cfal conditions pasteurization is the pro- cess of heating for a short or a long period, as the different processes de- mand, at temperatures usually between 140 degrees and 185 degrees F, As ap- plied to milk for direct, consumption pasteurization should mean a process of hoating to 145 degroes F. and holding at that temperature for 30 minutes,” “Value of Pasteurization— From a sanitary standpoint, the value of pasteurization {s of greatest importance when market milk {s under consideration, The pasteurization of milk, when the process is properly per- formed, affords protection from patho- genic organisms. Such disease-produc- ing bacteria as Bacillus tuberculosis, B. , @iphtherim, B. typhi, and other organ- isms of the typhoid-paratyphoid sroup,, and the dysentery bacillus, when heated at 140 degrees F. for 20 mintes or more are destroyed, or at least lose their ability to produce disease,” “Pasteurized Milk for In- fants—A rational view must be taken of the use of pasteurized milk. Shall the protection ageinst. infection, which {s made available by the proper pasteurization of milk, be discarded be- cause of its deficient antiscorbutic prop- erty, or shall its protection be accepted ie bale nearest in vitamin ©. be 18 Pp by feedin, or other antiscorbuties?” Sate theta There Is No Substitute for Safe Milk OOOOe SSFSSSPOSSOHSSSSHSOCOSOOOOS SSHSSSHOSHOOOOD
