SUPPER Brolled Oysters on Toast, Rice Muffins, Sliced Peaches und Cream, Cake, Chocolate, Recipes, A Good Sweet Pickle—This formula will answer for most fruits: Take four quarts of best vinegar, five pounds of best brown or coftee C sugar, quarter of a pound of stick clnnamon and two ounces of whole cloves to seven pounds of fruit. Boil up and skim well before pouring over the fruit. Most housekecpers rescald the syrup sev- eral times before finally putting away in order to Insure against fermentation. Sweet Plckled Plums—Select perfect plums, free from all decay, wipe and place in the preserving kettle, first placing a layer of plums, and over this the best cane sugar, and sprinkle over cinnamon and cloves, con- tinue until all the fruit, spices and sugar are used; then pour over the vinegar and set in bath of cold water and cook until the plums are tender but not broken. The proportions for the above recipe are elght pounds of plums, four pounds of sugar, two teaspoontuls of cinnamon, one tea- spoonful of cloves and one pint of ‘best cider vimegar. Place the plums in stone jars when cooked, cook the syrup for five minutes, pour over the fruit. Cover when perfectly cold. Sweet Pickled Peaches—Select fine, per= fect peaches, brush and cut in half and re- move the pits; fill the cavity from which the stone has been removed with horse- radish mixed with a little vinegar. Tie the two halves together and pack in glass jars and cover with the following liquid: To one pint of the best cider vinegar add two pounds of the best cane sugar. Tie in cheesecloth bag one teaspoonful of whole cloves, half a teaspoonful of cassia buds, three sticks of cinnamon broken in bits, and a few tiny pleces of ginger, allspice and nutmeg, not to exceed a teaspoonful in all. Place these ingredients in the pre- serving kettle and bring to the boiling point, pour over the peaches and allow to cool, reheat the vinegar and agaln pour over the peaches; this must be repeated three times, allowing the vinegar to become pertectly cold between each heating. When the preserves are finished allow to become cold before sealing. Keep in a dry, dark place, Spiced Tomatoes—Prepare a hot splced syrup of two pounds of brown cane sugar, half an ounce of stick clnnamon, quarter of an ounce of whole cloves and one pint of vinegar. Wipe carefully with a damp cloth perfect tomatoes, four pounds will be necessary; when the syrup is boiling hot put in the tomatoes and cook the syrup gently and when the tomatoes are cool return to the syrup and cook for ten min- utes, simmering very gently. When cold place in glass jars. The syrup must be as thick as good. molasses and perfectly cold before pouring over the tomatoes. Seal as usual. Spiced Grapes—Take perfect bunches of Concord grapes, wash and drain carefully. Place in the preserving kettle three pounds of cane sugar, one ounce of cinnamon, one grated nutmeg and one quart of best cider vinegar; tle the spices in & cheesecloth bag, place them in the sugar and vinegar, and bring all to the bolling point; lay the bunches of grapes in the bofling syrup and heat thoroughly.
