The new slaughter house to be run in connection with the Union Stock Yards commenced operation yesterday, though not at fall blast. The hog killlog part of the establishment has been thoroughly equipped and will toon bs ready to run at full capacity, while the beef slanght- ering branch will not be open untll about March lst. At this polnt, however, a brief descrip- tion of this most important entsrprise,— which, it may be said,'marks a new era in the history of local stock interests,— both in its inception, as well as its general features may not be uninterest: ing. THE MANAGEMENT. The slaughter houses built by the Stock Yards company, have been leasad unconditionally to George H. Ham- mond & Co., of Detroit for a term of three years. At the explration of this time the Datroit company will bave the privilege of leasing it for a term of five years longer, or to purchase it at a price to be determined by a board of arbltra- tlon to bs chosen by both partles. The loesl management of the concern will be ia ths hands cf Mr. H.H. Meday. THE BUILDINGS. 1t is somewhat difficult to specifically describe ¢che bulldings of the establish- ment, aa they have not been completed. But a rough idea of the situation of the plant may be gained by imagining a building, 226x128 feet, ths main slaugh- ter house. The portion of this awarded 00 the killing and dressing of hogs is di- vylded into three stories. In the first story are sitnated the boilar, engine and packing rooms, On the second story are jound the slaughtering, dressiag and cat- ting rooms, togethsr with the refinlng rooms, used in the manufacture of lard. The cooling rooms, twelve in number, are also on this floor. Ths third story s us:d for goeneral storage and miscellaneous purposes. On the north eide of the building is the beef-slaughtering addition, the founda- tions of which are already completed. It 18 expected that the superstructure will be completed about Marca 10. The dimenstons of the bailding will be 90x 128, The slanghtaring of cattle will be done in a mannet quite analogous to that of hog killing, barring a few minor de- tails. On the south side of the building there is being constructed en oil room, 64x136, which is to be used in rendering the entrails of the cattle. A number of vats and boilers will be placed 1n this room and the fat and entrails from the beef- slaughtering room will be tried and sep- arated into the oll and steirlne, both articles of standard commerclal valoe. THE PROCESSES. By the kind courteey of Mr. J, F. Boyd, a BEE reporter was shown through the various apartments of the hog killing establishment which commenced opera- tion yesterday. The sight was a busy and intereating one, and worthy of detail- ed description. Beginning with the firat stage of the prccess, a brlef recita! of the various stages of the operation which converts the squealing porker into the dressed meat ready for shipment is pre sented. In the first place the driver ecnds the swine into u long shute from the stock yards entrance, into a partition in the cellar or basement, thence to the second story where they are driven, a few at a time, into a sma'l pen. Here a man s'ands ready to catch each plg, cne leg of the animsl is fast- ened bya snaffle attached to a long chain, and the squealing porker is hanled up by a powerful lever until a clasp on the chain is made to fit over a long fron bar, some thirty or forty feetin leng:h, called a run-away.
