The same attention to details is necea eary, and a strict system, which ap- proaches mulitary discipline, is fol- lowed. The protits of a hotel may ba largely diminished or frittored away entirely through lack of judgment on the part of heads of departments and apt to occur in every large cstablish- ment. In speaking of the losses of hotels, a hotel-man said recently: “In a well-managed hotel, however, large the losses are not so groat as is With eareful buying and adequate ice- houses and cooling-rooms there shoul linen, Then the laundry is charged with the number of pieces sent to it, and oredit is given when they are re- rned.
