The Grecian poet Archilochus aud the Grecian tragediant scbylus afd Sophocles, who flourished about the same time, call it wine of barley.” Taeophrastus, who was a pupil of Aristotle and died 288 years before Christ, speaks’ | of tt under the same designation. In Bavaria the whole process is done undgr the supervision of a govern ment cficer, who puts his eeal on everything: the malt is weighed before him, and he must witness every change in the process; the brewer must wait feisure. Now, in manufacturing Jager, very much depends on exact time, exact heat and cold, ard on the stats of the wea ther.
