Modern equipment pasteurizes, bottles and caps the milk so that human hands do not touch it. This is an important factor in preparing milk for delivery. It guards against germs that menace children as well as adults. Pasteurizing in our plant is an interesting operation. Hundreds of quarts of milk are held in glass lined tanks at 145 degrees fahrenheit for thirty minutes—cooled to 42 degrees in an automatic refrigerator and run by a newly patented machine into hottles t hat are sterilized under the most sani- tary conditions. Pasteurization cleans all sediment from the milk.
