There are many ways of cooking fish. Much depends on the kind and cut of fish in deciding how to cook it. Small whole fish and fish steaks may be dipped in flour or corn-meal and fried in just a little fat in frying pan-—sauted. Very small fish and fil- lets of fish should be fried in deep fat. Fish to be broiled should be rather thin. Herring, erel are split down broiled whole. not more than broiling. Any fish may be boiled. The fish should be tied in cheese cloth and cooked in boiling salted, acidulated water. Moderate-sized fish may be stuffed and baked whole. Tish steaks are baked with a slice of bacon or salt pork on each steak. Menu for Tomorrow Breakfast—Stewed prunes, hoiled eggs, toast, grapefruit malade, coffee. Luncheon—Cream of tomato soup, croutons, stuffed baked apples, tea. Dinner—Boiled salmon, shoe-string potatoes, beet and cabbage salad, lemon custard pie, coffee. Remove core. Soak prunes in cold water for 2 hours. Remove stones anl chop fruit. Fill cavities of apples with chopped. prunes, a little sugar and 1 teaspoon orange juice to each apple.
