OPEN EVENING*S FOOD BOARD TELLY BAKERS HOW TO ACT Who Gook Our Pastry Washington, Dec. 18.—Rules and regulations for licensed bakers were made public today by the Food Ad- ministration. A schedule of standard weights for bread and rolls is provided and the contents are restricted; but for the present there will be no: ob- jection to the baking of products from sweet yeast dough or of crullers, doughnuts, ice cream cones, pastries and similar products. Rules lating their production will be pub- lished later. use standard weights for hread Food Administration has decided for the present to permit small bakeries to sell portions of loaves. Bakers on the east side of New York have been selling bread in portions of slices for 1 and 2 cents. They said that many families there were unable to pay for one pound loaf at a single purchase. The rules state that the Food Ad- ministration has fixed no price for | baking products, but add that action will be taken against bakers who charge more than a price which fur- nishes a reasonable profit. Hotels and restaurants and rail- road companies which engage in bak- ing come within the restrictions of the licensing system as well as the | seneral baking industry. Institutions | cofitrolled by a state or any political { subdivision thereof, hospitals, sani- tariums and similar institutions | charitable institutions, | lic or private, are exempt. One section of the rules .provides | that “all returns of bakery products to the licensee or allowance for un- | s0ld bakery products, no matter under what gulse, are forbidden.” All sys- tems of rebates also are denounced. Special rule No. 1 requires that bread shall be manufactured only in units of the following weights: “One pound, 1 1-2 pounds, 2 pounds, 3 pounds, 4 pounds, 4 1-2 pounds, and any other weight of even pounds, or any weight into which 1 1-2 pounds may be divided without leaving any remainder.” If a twin or ‘multiple loaf is baked each unit of it must con- form to the weight requirements. The weight requirements apply to all kinds of bread. Special rule No. 2 permits the bak- ing of pans of rolls if -the units con- form to the weight requirements. Special orders for rolls that weigh less than one ounce or more than three ounces cannot he filled.
