Zrowers of avccados, often incor- rectly called “alligator pears,” would do ‘well, says T. Ralph Robinson of the United States Department of Agrie culture; to send the fruit to market in printed wrappers which would instruct the purchaser in its use and emphasize that the fruit should not be served or eaten until it is soft throughout. The attempt to eat an unripe avocado is not only disappointing, says Mr. Robinson, but may be so distressing as to discourage any further purchases of this excellent fruit. The fruit should be used, however, before it softens to mushiness. From a dietetic standpoint the avo- cado is noteworthy for its high fat con- tent. In this respect it outranks all other fresh fruits. Mature avocad®és of the Guatemalan and Mexican races have an oil content ranging from 15 to 30 per cent. The softer-fleshed West Indien varieties contain from 6 to 12 per cent of oil. Because of its excellent dessert flaver and its desirability as a salad fruit, it is probable that the avocado would be widely popular as a dooryard fruit in the United States if only it were hardier and more resistant to frost damage. As it is, avocado culture is confined almost en- tirely to California and Florida. And even in Florida, some of the more desir- able avocado varieties flourish in only two or three counties in the southern part of the State. The Mexican varie- ties are somewhat more hardy than those from the West Indies, but the northern border of avocado culture falis about at the limit for lemon growing. .
