After I found the tomato which I believe to be superior to all others in flavor, I next discovered that it was necessary toeliminate in addition to the skin and seeds, almost all of the top half which so often contains green parts with their sharp, acrid flavors. My decision to use only the sweet- est part of the tomato was merely one of my innovations. Better methods of cooking which I learned from the great French soup maker, Ferdinand Grandi, helped me retain the delicate flavors that make this soup so appe- tizing.
