In my opinion it is the high note of the acrid flavor of the unripe parts of the to- mato that spoils many otherwise good tomato soups. ‘The acrid taste in tomato soup, we used to think, came only from skins and seeds, but I have gone further by my process of selection and preparation, and I now elim- inate almost a third of the tomato—in fact, almost half of the entire top. ‘The mellow part which I retain contains only the sweet tomato sugars, the mild, appetizing tomato acids, but more than that, the parts which I retain of these two elements in the temato seem to be in just the right proportion. There is not too much acid and too little sugar—there is just a proper balance of each. There is, therefore, nothing sharp about my new tomato soup—no discordant notes of acrid flavors. On the other hand, it has a fullness and satisfying taste, in which is uppermost the pleasing flavors of the sweet, tomato sugars. A pleasing symphony of flavor, it might be called, indeed.
