I believe that if such economic ad- justmenis were made, nine-tenths of our marital troubles would cease. 1 feel sure that it would stop the pres- ent exodus of wives from the home into clerical positions which call for no special talent but merely offer “money she can call her own.” Why shouldn’t the wife want such money? Why shouldn't she desire payment for her services as well as a man? Would a few kind words and a kiss satisfy John Henry in place of his pay en- velope? TI'll say they wouldn't! Then why should he expect them to satisfy Matilda Jane? But December lettuce is as'fresh and green as June lettuce from'the garden. And certainly noth- ing is more indicative of the arrival of spring than asparagus from local gardeéns. Well, the time when we can get fresh asparagus for a reasonable price is at hand or approaching. And this vegetable that began its career in prehistoric times as a weed of the marshes is in the vegetable stalls now in big, luscious bunches. It is not a diflicult matter to pre- paré;msparagus so that it is del cious. We don’t seem to tire of plain boiled asparagus. However. it is possible to prepare ! it in ‘many other worth-while ways. Asparagus should be boiled stand- ing fnd upward in a deep saucepan; nearly two inches of heads should be { out of water, steam being sufficient| to cook them. as they form the ten- derest part of the piant. The hard, stalky part Is rendered soft by the harder boiling which this plan per- mits. Cooking thirty or forty min- utes this way will render a third more of the stalk delicious, while the head will be properly cooked by the steans.alone. The “up-state” method of cooking paragus preferred by man: Only the tender portions of the stalks are used. the tougher parts being re- served for the stock pot. Cut the tender portions of the stalks into half-inch lengths and cook until ten- der in just enough boiling salted water to cover well. When tender— and it will require more than twenty minutes—season them and the liquid in which they were cooked with salt and -pepper, plenty of, butter and ecream or milk, and serve on toast. In this way the distinctive flavor of the vegetable is preserved. Puree of Asparagus. Boil in a pint of water until very tender one bunch of asparagus. ‘When tender, rub through a colander, put into the liquor in which it was boiled, add three pints of soup stock, a pint of milk (cream if you have it), two . tablespoons butter. a light] sprinkling of white pepper and salt to taste. Boil a few minutes and serve. | Asparagus Soup. Two quarts of good soup stock. thirty large asparagus stalks, two tablespoons of butter, one of flour, pepper and salt to taste. Cut off the head# of the asparagus and cook un- til tender in a little salted water; boil the stalks until tender. mash them, through a sieve and put into the #oup kettle, add the butter and flour, let boil slowly five minutes, ' pour into the soup tureen, add the asparagus heads and serve. Cold Asparagus. There are many ways of treating pold asparagus, all of which are ap- petizing. With just a French dres: ing it is dainty and specially attrac- tive on a hot day. With a little mus- tard added to the dressing many like it still better. With a mayonnaise or sauce tartare it comes close to per- fection. Again, lemon juice or simply salt (is used with chilled asparagus. T eaten cold, asparagus must al “:yafl)e well drained and perfectl ehilled. Asparagus Rolls. Cut the tops from ten small stale French rolls: remove the crumb and lay the shells with the tops in the oven for fifteen minutes to get dry nd crisp. Put a scant pint of milk in_a saucepan on the range: add two tablespoons of butter and one of flour rubbed smooth together. pepper and salt to taste: allow to simmer a few minutes and then add three eggs well beaten; stir until it begins to thicken. then add the tops of ten- der stalks chopped fine of three bunches of boiled asparagus; simmer until well heated: fill the shells. put on the tops and serve very hot. Bolil- ed cauliffiower may be substituted for the asparagus. Canned Beet Salad. Drain and rinse the beets, then hol- Jow them out to form a cup. Mix with one-half cup of canned Peas what 1s taken out and chopped.
