He has it before breakfast, at breakfast, at lunch, at § o'clock and at dinner. Also the children of the poor drink teh. Yet most of us know little or nothing of what tea really is—what it does to or for us. Tea as we get it is the dried leaf of an evergreen shrub or small tree cul tivated in China,-Japan, India and th East Indies. There are two main va- rieties of tea plant, the Assamese, cu.l- tivated chiefly in the very hot, molst climate of India and Ceylon, ylaldflng from 400 to 1,000 pounds an scre, wi several pickings vearly, and the Chini grown in a cooler climate, smaller, darker, tougher and of more dellmu flavor, yielding four or five pickings, o flusings, as they are called, a year, lnd used chiefly for green tea. The same plant may yield several grades of both black and green te: the difference in color, odor and flavor being due to the methods of prepara- tion. For black tea the leaves are bruised to liberate the juices, fermented for a short time, and dried. For green tea the fresh leaves are roasted or steamed, rolled and dried as quickly as possible to prevent fermentation. Th smaM leaves and the first pickings produce the finest grades of tea.
