It is something of an art to be able to select what will remain dis- tinctive. . The very fact that a cer- tain mode appeals to you usually { means that it has characteristics that will make it appeal to some thousand other women. Still some women be- come rather expert in selecting what is attractive but yet can never be- come too attractive to the many. The good housekeeper becomes an ute judge of textiles. For her business of managing the home em- braces the purchasing of clothing, draperies, bedding, table linen and other textiles necess ry to furnish- ings or wardrobe. Surely she must not, through ignorance. bu poor grades of cotton, linen, wool and silk —perhaps paying as much for them as for higher grades. During this month and part of next 1 shall publish one article a week on textiles. Today I will deal with cot- tons. : How is the housekeeper to know Kood grade of cotton? There are se eral tests. A cheap grade of cotton is frequently made to appear heavier by the addition of mixtures called “sizing.” Starches, dextrin, glue, ®ums, china clay and other ingredi- ents constitute this sizing, which adds a large percentage to the weight of a cheap. thin, loosely woven cot- ton. Adulterations of this kind give the cloth a good finish, filling up the spaces between the threads, but the wearing quality is very poor. One test to determine the quality of cot- tons of this sort is to train the thumb and finger to feel the harshness which sizing gives cotton. Another test is to.rumple a little of it and see if still another cotton test is to wash or thoroughly boil a sample in soda and water, then compare the dried and ironed sample with the bolt of un- laundered cloth. In giving these tests I do not mean to be misunders.ocd as saying that cheap grades of cotton should pever be purchased; there are many and excellent uses for the cheaper grades of cotton—only ‘the housekeeper should know enough about cottons to avoid the mistake of paying a high price for a grade that is not really worth the ‘money. Upon the house- wife’s shoulders rests the burden of running_the home at the least ex- pense. She cannot do this unless she becomes a judge of the supplies she must purchase. How to Know a Good Grade of Mercerized Cotton.—If you want a good quality of mercerized cotton— and by a good quality I meam one whose gloss will not disappear after hard wear or laundering—expect to pay a fairly good price for it. The cost to the manufacturer of produc- ing a high grade of mercerized cot- ton is about three times that of pro- ducing unmercerized cotton; conse- quently if a piece is offered at a very low figure it is well to test it for true mercerization before you buy it. Ask for a sample and take it home and launder it. chalky-white specks of sizing come off.on the fingers. (Ask for a sample of the goods, to do this) Still an- other test is to hold a sample up to If the gloss disappears you will know that it was reasonable because its mercerization was only an imitation. Real merceri- zation on cotton is produced by the the light and tear it quickly; if a small cloud of starch or sizing can be seen, the quality is poor. Again, touching a sample by the tongue will often result in a starchy taste. And action of a strong alkali on cotton fiber rinsed under tension; an imita- tion® of mercerization may be made by the action of very heavy and hot cylinders on ordinary cotton cloth. HOME ECONOMICS. * I BY MRS. Every woman would llke to be graceful and many whose features are not lovely give the effect of beauty because they are graceful. There are two main causes of graci the first, a healthy body with well co-ordinated muscles; the second. a lack of self-consciousness. The fo mer really is necessary to produce the latter, but many apparently healthy people are not graceful be- cause their_development is not well balanced. Some are graceful only in performing that one action with which they are most familiar. Thus a beautiful horsewoman or a swim- mer is not unlikely to be an awk- ward walker. But the all-around athlete or the woman who. from childhood has had free use of muscles and has kept her h inevitably graceful. ‘Too heavy work of any sort. in the house or out of it, which overdevel- opes any set of muscles, leaving others undeveloped, makes for awk- wardness. Drudgery, where the mind centers on the dreariness of the work rather than on the goal to be attained by it, or where the work is done under the direction of another person’s will, also causes awkward- ness. But idleness, self-indulgence and sloth are the worst enemies of grace. Play and dancing are nature's greatest specifics for grace. In play. self-consciousness is lost in the joy of the activity: in dancing, in the influence of the music. The woman who works wisely with a will and plays and dances when she can will always be more graceful than the luxurious idler. (Copyright, 1921.) Variety With Cabbage. The cheapness of cabbage compared with many other vegetables is some- thing that recommends it to many but likewise this very cheapness seems to have made some housewives devote little attention to cabbage. They seem to think that just because it is inexpensive :t lacks possibilities of flavor and that it isn’t quite worth much attention. One advantage of cabbage is that it keeps fresh for some time. Thus, if you must order on Friday for vegetables to eat Monday or Tuesday you hesitate wisely in buying corn or beans. as they dry anddeteriorate, But a fresh cabbage kept in a cool place will remain fresh for many days. Don't make the mistake of cooking cabbage tco long. The water should be boiling actively when the cabbage is put in the kettle and it should con- tinue to boil rapidly with the cover off the kettle for half an hou until tender. It should then, be re- moved at once and never allbwed to lie in the water in which it has been boiled. It is a great mistake to think that cooking cabbage a long time will make it more digestible As a matter of fact. it is long-cooked cabbage that has brought cabbage its bid reput: tion. When cooked quickly in ac- tively boiling water it seldom causes any difficulty, and is really whole- some. It should be left uncoverea while boiling. Stewed Red Cabbage a la Flaman Boil a red cabbage. Stuff it with a force-meat of mutton, veal, or sausage-meat; cover with stock and stew it for‘three or four hours until perfectly tender. It must simmer very gently. Dish the cabbage on a round dish; set the sauce again on the fire and boil it down brickly for a few minutes, then stir in a little corn- starch blended with cold water; boil three minutes, stirring constantly: strain, and pour over the cabbage. Stewed Cabbage and Celery. Cut into shreds equal quantities of cabbage and cclery. Lay for a few minutes in cold water, then drain and put into salted boiling water. Boil gently for twenty or thirty minutes, according to the season. Meanwhile prepare a rich cream sauce. Drain the cabbage and celery as dry as possible, and stir into the cream sauce.
