Last evering the Pure Milk Dealers’ Associa tion held a meeting in Faber's Hall, on 9th street, and a number of dairymen were prosent to listen to an interesting talk on pure milk by Prof. Wiley of the Agricultural Department. Prof. Wiley first spoke of the large amount of milk that is consumed and of the necessity for product, with the exception of sugar, had been subjected to so many analyses as milk, and for that reason, he said, thesale of impure milk is sure to be detected sooner or later. Furnished as it is to millions of consumers, it had been extensively adulterated, and to prevent this fraud upon the public, and, perhaps, injury also, a chemical control of the milk supplied to many cities has been instituted and maintained. He spoke of the Jersey cow giving the richest milk in general use, i BOILING MILK. Prof. Wiley spoke in favor of the boiling of milk, so as to kill all the injurious matter which it might consume in being left open to the air and the impurities that may be 1m the place of storage, especially during the summer time and during the period of infectious diseases. Milk seems tobe the natural home of all kinds of organisms. Not only does it carry those which are not deleterious, put also those which are injurious. It even has the power of absorbing lors in the highest degree, so that milk ex- posed in the presence of bad odors rapidly ac- quires them. Experiment, he continued, has shown that any milk exposed in a place where there are onions will acquire the odor of the vegetable without any act on the part of the cow, and so it is that the milk will acquire the odor of an unclean or filthy dairy, but by sterilization milk is relieved of impurities. ‘The speaker im- Pressed upon the minds of his hearers the no- cessity of having a good breed of cows, properly constructed stables, and the keeping of both cows and stables as clean as possible. THE CARE OF cows. ‘Then the animals must be properly fed, for, he said, cows fed on slops and refuse of distil- leries surely cannot be expected to give the pure milk of a cow that is fed on grain and hay and such healthful food. Then, too, the water the cows drink plays an important part in the character of the milk produced. Cows, he said, have a tendency to drink stagnant water in preference to the water in a running brook, but such stagnant pools should not be permit ted m the pastures. ‘The improper feeding and watering of cows does not only lower the standard of the milk, | but it is also calculated to throw the animal into a diseased condition and thereby decrease its value. Prof. Wiley repeated the nece, the animals und stables clean and furnishing | | proper food. und said that the vessels used | about the dairy should be sterilized every day. | In conclusion, he said that the milk of each an- |imal in aherd should be examined separately to determine whether or nov it is upto the standard, and all animals whose milk fails below the standard should be rejected from the herd. | The standard which the dairymen should use, in his opinion, should be 12.5 per cent total | solids and a minimum of 3.5 per cent of fat. During the summer months the minimum may be reduced to 3.25 per cent. ‘A vote of thanks was tendered Prof. Wiley and the meeting adjourned. ‘The next meeting will be held on the 15th of next month. ity ofkeeping THE BAROTTE LEAGUE. An Organization Formed to Liquidate the Debt of St. Augustine's Chureh ‘The temporary organization of a number of the members of St. Augustine's Church for the purpose of reducing and finally wiping out the debt of that church was last night made a per- manent one. The meeting was held in the parish school on L street and was weil attend the absence of the president, Mr. Bowit presiding officer was Dr. Lopez, who was cl man of the committee appointed to draft a constitution. After the minutes of the previous meeting had been approved Dr. Lopez made the report | of the constitution adopted by the committee. The report Was read seriatim until, upon the suggestion of one of the members, it was read | until some one had a suggestion to offer as an | amendment. The constitution was adopted practically as it was reported. The annual commencement exercises of the minim and junior classes of the Academy of the Holy Cross were held last evening in the large hail of the imstitute on Massachusetts avenue between 18th and 14th streets. There was a flattering attendance of the parents and friends of the school, and there were plants an flowers and lights sufficient to make the scene one of rare beauty. Clark, to whom the Com- missioners several months ago awarded the garbage contract, was in the Police Court this morning to answer the charge of violating the health ordinances preferred against him yee- terday by Warrant Clerk George M. Washburn of the Police Court, as published in yesterday's Sraz. ‘Mr. Pugh. the prosecuting attorney, called Judge Kimball's attention to the.case and said ‘he was ready for trial. “Lam not ready just now,” said Mr. Clark. “My attorney, Mr. Henry E. Davis, is not present. and another thing, I want time to get witnesses and prepare the case.” “When were you arrested?” asked the court. “This morning,” the defendant answered. “Then you are entitled to a continuance,” said the judge. “Lam here charged as the defendant,” said Mr. Clark, ‘‘when i haven't had anything to do with the business for a month. “Are you the contractor?” asked the court. “I was the original contractor,” he answered; “but the National Sanitary Company has been conducting the business for several months.” “Was there a transfer with the consent of the Commission: “Idon't know just éxactly how the matter stands at present.” But the Commissioners were aware of whatever was done. Mr. Pugh said he thought the case should be heard at an early date. The Spanish Dancer Occupies an Opera Box Attracts Much Attention. Astrikingly handsome woman, gorgeously dressed in evening costume, with diamonds and other precious gems in profusion at her neck and upon her hands, was unconsciously at- tracting unusual attention as she sat in a box at Albaugh’s Theater last night. She was ap- parently not an American, for the rich olive coloring of her smooth skin, the flashing dark eyes, raven black hair and snappy style were indicative of thelanguorous native of the sunny land of Spain. As she sat there thoroughly en- Joying the performance, her dainty hauds glee- fully applauding the singers and her face light- ing up with pleasure as she broke into a hearty laugh at the comedy, she was as unconscious of the attention she was receiving as though there was no one in the audience but herself. At first it was the remarkable beauty of the face and the grand carriage of the well-formed figure that caused the spectators to turn in her direction, but after the second act, when it be- came known on the foyer that the object of ob- servation was no other than the famous Spanish dancer Carmencita, the audience were even more demonstrative. Though at the end of the opera, Carmencita waited until every one had left the orchestra chairs, in the lobby a large crowd had gathered to catch a glimpse of her. During ber siay in the city she will be the guest of Mrs. Blanche Chapman Ford, at her home at the head of 16th street. During the performance a Stan reporter was accorde terview. Carmencita speuks very little English, but her brightness and clever pantomime makes it not diffieult to un- derstand her. She apparently has the quickest conception of wit and enjoys thoroughly a good laugh. Recently the statement has been published that the wonderful muscular strain that the dancer must undergo in her unique and thor- oughly charactetistic dance had undermined ber strength and health.and that soon she must stop or endanger her life. When this sugges- tion was made to Carmencita she shrugged her shoulders, gave aroguish smile and replied ‘ificantly: “‘Nouspaper stowry.”* Her physical condition, she said, was never better, and dancing, instead of injuring her. keeps the system in perfect condition and health. Carmencita ewhibits the greatest nervousness in appearing before a Washington audien: tonight. She has heard of their critical cha acter, and, said last night, she fears thi the people of this city will not understand the meaning of the dances of ber country and will misinterpret them. Her dancing is not of tho igh-kicking variety, for seldom does she lift her foot but a few inches from the floor, and | her costumes are the beautiful colored ones of her native land and are very long. A friend of the dancer seid that on only one occasion had the ever seen Carmencita exhibit any temper. It occurred in Minneapolis, where a reporter interviewed her and then wrote a story to the effect that. though her dancing was not of the high-kicking style, in order to show that she could dance “zee American style,” she lifted her dainty foot and tapped the chandelier. “If that young man could have been found I believe sho would have thrashed him,” said the informant. a THE COURTS.
