Morse styles a much-used utensil in American cookery; and according to & late report of the Massachusetts State Board of Health the epithet wonld seem to ba well | applied. Accorting to that report the prevail- | ing indigestion msy be attribated to eating rank, greasy, morbific food at which an ostrich might hesitate. Jhe editer of dearth and Home says in this connection that two or three years ago, in a spirit of helpfulness, he asked his sub- ecribers to send the genuine bill of fare for one week of their comfortable home tables. The | bundreds of replies recetved disclosed the ap- palling fact that the basic idea of the larder, so to speak, the unfailiag manna in the wilderness Of uninventivencs+, the exyedient of haste and the apparent chwice of leisure, was fried salt pork! Eight ont of every ten housekeepers used it every week. Many used it every day, or every two days. Donglnuts, fried potatoes, fried steak, fried cake, fried ham, were fre- quent offerings to the spirit of home comfort. In short, throng’ out the length and breath of the land that in-trument of wo, “the infernal frying-pan,” seems to be an ugly sort of Circe’s cup, subjugating whoever tastes of its conten Upon this data, Hearth and Home proceeds to read a lecture agsinst frying, which it says is a metbod of cookery which has simply inglorious ease to recommend it. It disengages a fatty acid which the meekest stomach rebels against, and the humblest blood refuses to incorporate in bealthful union. It toughens and makes in- digestible the tenderest flore subjected to its ravages, and therefure while sach food satisfies hunger it dees not repair the wastes of the body. A continuance in the eating of fried riands in- | vites dyspepsia, nervons irritability, weakness of body, perversity of spirit, and domestic in- | felicities. Indeed, it might almost be said that | when the frying-pan comes in at the door love | flies out at the window. If an American farm- | er'sor mechanic's wife does not know, to-day, | that unwholesome food is poison, and that rich, | greasy, fried food is unwholesome, she is in- | excusable for that ignorance. If she does know | it, and continues in her offense, to ssve time or labor or expense, she is guilty of slow poison. | ing. If she bave no meat but pork let that be used sparingly, or not at all. Well boiled rice, or oatmeal, or eggs, baked potatoes, and fresh bread and butter, milk or beans, are better food and cheaper. Beef and matton, broiled or baked, make muscle and fibre and healthy nerves.
