Daring his connection with the board of health Gatchel, to whom was entrusted the inspec- mm of live stock, unearthed many abuses in emection with the sale of animals forslanghter, h deserve to be brought to the attention of the pablie. It is a fact, perhaps not generally hvown, that the White House and several of our [tincipal hotels have for vears past becn supplied with beef from Baltimore, the impression being that the cattle slaughtered in that city are supe- THURSD secu rior in condition and quality to those offered for al in the District of Colambia. This may be a but we care only to mention the fact. ft is universally conceded that fat cattle make the best beef, bat desiring a scientific opinion on thls point, Mr. G.submitted two pieces of beef— © good, an: the other inferior in quality— chemist of the board of health for analysis. ‘The result of the analysis was of course greatly iy fmver of the good meat, and the chemist in ¢ his investigations stated that the nutritive quality of fat or good beef expremed by 156, and that of lean or meat of the same kind at 100, thus show- the first is virtually fifty per cent. better than the Iast. To insure a better quality of meat in our kets Mr. Gatehel recommends in his yepert the enactment of a law probibiting the slaughter of any animal for food that does not dress at fty pounds to the one hundred only benefit the public generally, but many of the butchers themselves, who suffer from the exposure and sale of inferior meats. Mr. A. for instance, who prides himself on selling meat of a superior quality for, say twenty-five cents per pound, can look over any day at the stallof his neighbor, Mr. B., and see him sell a pound of inferior meat at twenty eents per pound; and forthwith the publie withdraw their custom sbecame he charges five cents a pound more for beef then Mr. B.,” forgetting that in reality the meat they buy from Mr. B. is not worth more than half what they pay for it. That much meat is fevered and thus rendered unwholesome through the transportation, over Jong lines of railway, of cattle literally crammed inte the cars and deprived of food and water for days together, there is no doubt whatever. Medical men do not hesitate to express the nion that the flesh of such animals is utterly unfit for food, and can give the mest conelusive demonstrations of the correctness of their views. Attempts have heretofore been made, but have failed, to seeure the passage of a general law regulating the transportation of cattle, but at Present the prospect looks more favorable. Such a bill has recently passed the Senate, and it believed will pass the House this session. Its enactment is demanded for sanitary as well as for humane reasons. But there is another abase to which Mr. G. calls attention im his report. and we leave him to be it im his own words: «(ne or two days before the animals are offered in the ya sale they are starved, being allowed neither food nor water. The night betore the day of sale they are fed on hay and whieh has been saturated with salt water— ater being allowed th em. Alterwa they were allowed to drink as much water as they wanted, and at two o'clock they were again weighed, when it was found they had increased in weight over sixty pour ten seach! On account of this practice, from twenty pounds are thrown off by the jeaving turty or ffty pounds of water to aid for by the purchaser.” “Blown meat” has been driven out of our markets by the vigorous and determined action of the board of health.
