In point of excellence, it is one of the nicest articles, when Properly prepared, that we have in, our store- xoom. It is also one of the most economical ar- ticles of food; quite a small quantity of dried beet, shaved very fine, and cooked with ice gravy, will serve for meat for a family at a very Etnail expense. ‘Then it isso convenient to have, always ready; always acceptable. To people who live convenient to market, it is not of so much im- ‘tance; but to us, who live at a distance trom Uives, dled beet & one of the necessary arti- cles in our bill of fare. We frequently en- tertain guests at our table who never have seen Gried beef served other than as a relish for bread and batter; shaved and eaten without cookin, There are several methods of cooking it. Some prefer it cooked with a gravy of water, Seasoned with butter, thickened with flour, and, perhaps, cee broken in while cooking. Others cook it with erumbs of sausage, frying the sausage first, then adding the beef with water and thickening with flour. It is also very id cooked with a little sweet milk and cream, Bee 'gravy being thickened with flour; allow it to boil once; that is all the cooking 1, requires. A dish of dried beef, properly cooked, served with toast, baked potatoes, and boiled eggs, is a very Rice provision for breakfast or a dinner prepared in haste. We prefer to cure our own beef, as that bought is apt to be too salt. 1 find that if too Balt it can be remedied by soaking after cutting and before cooking, and adding a little white Sugar while cooking, to restore the sweetness Jost by soaking. The mania that exists for precocious education and marriage, causes the years that nature designed for corporeal development to be wasted and perverted inthe restraints of dress, the early coufinement of school, and espe: y inthe unhealthy excitement of the ball-room. Thus, with the body half-clothed, and the mind unduly excited by pleasure, pervert ing in midnight revel the hours designed by nature for sleep and rest, the work of destruction is half accomplished. In consequence of this early strain upon her sys- tem, unnecessary effort is required by the delicate votary to retain her situation in school at a later day, thus aggravating the evil. When one excite- ment is over, another in prospective keeps the mind morbidly sensitive to impression, while the now con- stant restraint of fashionable dress, absolutely for- bidding the exercise indispensable to the attainment and retention of organic health and Streagth; the exposure to night air; the sudden change of temps- rature; the complete prostration produced by exces- | sive dancing, must, of necessity, produce their legit- imate effect.
