THE EVENING STAR. aches and Plum: To REMOVE THE SKIN FROM PRacnEs—An Exccilent and Expeditious Method.—Make a lye sacog Possible of wood ashes and soft water. ill a kettle with the lye, and, when boiling rapidly, drop in twelve ‘or eighteen peaches, and take out again almost immedi- ately, and immerse them in 4 pail of cold water. Take one in your hand and you will perceive that the rind will slip off entirely, jJeaying @ round, beautifal yellow ball; throw it smmediately into another pail of pure water, and so proceed till all are done. ‘Will not injure the flavor of the finest peach, and once tried, the old-fashioned method of yrits with a knife will not be again adopted. the lye is not strong enough, put into the Kettle two dipperfuis of clean wood ashes. This is an excellent way to rid small enions Gi ihelt Jackets preparatory to pickling them. vy, acts TO BorTLe.—After seeing that your weit les or cans, with their proper lids, are ready, season your bottles by pouring into each one @ pint of water, in which you can bear to held your band any length of time, but which should be quite warm. Place upon the fire a nice clean porcelain or brass kettle, im which is about pint of water; sweeten it and place in the peaches, which are prepared. ‘We always halve ours. As soon as beiling, empty a bottle of the warm water and fill ‘with peaches, pushing the topmost w: Mt un der the juice, and put on the lid immediately; put more pesches into the kettle, and more sugar and water as required. We always keep a kettle of boiling water ready at the back of the fire. To PICKLE Pracr es.—W ipe them well, and stick into each me bree or tour cloves, and ace in & crock; are a pickle as follows: 'o one peck of peact es allow three Ibs. of su- ar and mearly one quart of vinegar. Scald and pour over three successive mornings. PLums TO PICKLE.—After weighing, place the plume in a jar or crock, a layer at a time: between each iayer scattering a few cioves, stick cinnamon and allspice. Then to three Ibs. of fruit allow one Ib. of sugar, and vine- gar enough to moisten nicely; boil and pour Over; setthe jar in a kettle of warm water, and Jet the water boil till the plums are soft, or drain them and pour over again till the juice ‘Will cover the plums.—Country Gentleman. B jets. Bonnets, according to the New York Evening Post, will be worn a little larger this fall, with flat, brosd crowns. On the early fall styles there is @ lavish sprinkling of gold. Amber has gone out. Disdems will be extensively Worn, either with @ close-fitting shape, or with ashape allowing the wearing of a wide bandeau, trimmed with flower sprays, satin, or velvet. The prettiest ornaments worn on the bead will be. imitations of the familiar Jorms and tints of the season. Among the novelties is a hat of brown vel- ‘vet with a broad band of pheasant’s feathers across the crown, and another of crimson vel- vet, trimmed in front with clusters of fall leaves and berries. A fall of black lace onthe disdem forms a veil, and the crown is bound ‘with red satin. A “Lagrange” bonnet embroidered with a jet weeping willow: a white royal velvet bat, diadem front, ornamented with a tulle scarf, bomming bird and toft of marabout: a called “Le Mousguetaire de la Reine,” of drab velvet, trimmed with brown satin and behind with strings ef black lace;a “Oharlotte Corday” hat trimmed with white satm, gold cord fringe. black lace and white ostrich plume are exhibited. Besides other fresh styles, there are several new modifications of the favorite « Fanchon,” as well as of the round hats. Of the latter, the “Parepa” bids fair to be the favorite. In coifures, the novelties are a Cata- Jan, whose principal ornament isa cluster of cactus leaves, and a “Lucretia Borgia,” or- namented with a golden palm leaf. Madame Demorest’e « Drusilla,” a curious compromise between a cap and a bonret, is highly praised. It is of a peculiar shape, a deep point on the ferebead, three inches back a basque front, and a flat crown. IMPORTANT ARREST. Startling Record. A counterfeitor named Edward Williams was arrested at his house, in New Egypt, Ocean county, N. J., by United States Detective Net- ueship, on Saturday. The career of this man is at once startling and strange. The day pre- vious to the trial of Charles Dobbins, inthe United States District Court at Trenton, dur- ing lust July, for alleged “shoving” of ‘coun- terfeit money, Williams sought Detective Net- Uueship and volunteered to become a witnes, against Dobbins. The detective believing tha: the man was endeavoring to make his escape from the conseqnences of his own evil doings declined his services. The detective then set himeelf at work to gain evidence against Wil- Jiams. He learned that Williams intended to visit a Methodist camp meeting at Pointville, Cumberland county, anda decoy was accord- ingly sent to that place, with instructions to gain the confidence of the suspected counter- feiter. Walliams was found in all his glory atthe camp meeting, shouting with the brothers and praying with the sisters, and apparently joining with his hole soul in all the religious exercises. He ad his own tent on the ground, in which he employed himself during intervals at taking photographs. The decoy soon became his “pal,” and finally bought of Williams $90 worth of counterfeit money This transaction piscea Williams in the desired position. but e Was allowed to rum loose for a while, it being feared that his arrest might interfere with the arrest of other parties. Finally all was right, and Williams was arrested at New Egypt, whither he had gone after the adjourn- ment of the camp meeting, taken to Newark and eafely lodged in jail. ‘The affair was not allowed to be made public. however, until yesterday. A search of Williams’ residence Fesulted in the discovery of his commission as & spy in the Confederate service. and permis- Sions from several lending generals allowing him to take photographs within our lines. In this way itis supposed that he gained into-- mation and conveyed it to Richmond. He manifested much surprise upon being arrested, but when informed that enough evidence to convict him had been obtained he “acknowl- ecged the corn. N.Y. Herald.
