THE EVENING STAR. The Fall Cheese Making. Early in the spring & suggestion was mide hy us in reference to a liability in family cheese dairying of manufacturing soft and porous @heecse. There are two kinds of chense of this | ¢haracter—in the one the curing process goes | on withont difficulty, and the cheese, thongh soft. and of @“honey-comb appearance,” is of good flayor, and thoagh in some respects Objectionable, may be disposed of in the home markets. The other curesDadiy. It swells and “puffs ” is extremely porous, and when bored with the trier is of & light and yeasty char- acter, eo thai it will not fill the instrament. It js “out of favor,” 4nd continues to depreciate dm quality as its age increases. Large qu2n- tities of such cheese are made spring and fall, eausing & considerable loss to either the pro- ducer or purchaser, This kind of cheese is greatly detested by dealera, since one or two mized upina lot that are firm and of good quality injures (he sale of the whole, or makes & consideranie joss on the purchase. The character of cheese now in demand for the Evropesn markets is pretty well ander- s‘cod by old ard ¢xperienced dairymen. It mnst be firm, mellow and buttery. Solid, bat not hard and crumbly, ard when tested by the trier presenting # close, even texture, free from porosity and yet baying sufficient moisture and butter in fis composition to spread uuder the finger or melt inthe mouth. Its flavor must be sweet and ‘‘clean,” terms weli nn- deratocd im the trade and of peculiar signifi- eation. Rut to understand what is wanted, and be able to manufacture it are two things, the latter of whien the most experienced are sometimes liabie to faii in. Milk at this season of the year is rich, and the tempearture being low does not so readily Yeach that point toward aeidity which is necessary for the production of first class eheese. This is particularly soin family dai- ries. When the milk is soon made up, the enre is often found difficult to he cooked and worked down to the requisite eonsistency for & firm, solid cheese. ‘rhe whole trouble lies in trying to manufac- ture after the oriinary method trom milk that is too sweet. Such mit will require an application of sour whey, which may be added at the time of putting in the rennet or atterwards during the Processf[ot cooking the curd. As a general rule when the evening’s meal of milk stands in the Morning at or below 62 deg, the morning’s milk may be added toit, and at the time of | putting in the rennet a guentity of sour whey sbould be added and stirred into the muss io the proportion of 2 quarts of whey for every 60) or 70 gallons cf milk. If the night’s milk stands below 9) deg, a large quantity of whey May be used,and the quantity ot whey always egradnated according to the degree of swest- mess ofthe milk. When the evening’s meal ot milk stands, above 95 deg.. in the morning, no sour wheyneed be used,as the milk isonitsway towards a change,or bas acquired sufficient S@gidity to render the use of the whey not only = pane bh but a damage from au excess of acid. When milk bas not been treated with sour whey at the time of adding the rennet, and there is a difficulty in cooking the curd, it will be bet’er to add tothe mass, while cook- ing, asuflicient quantity of whey to harden up the curd. This, perhaps, will be the safest course to be adopted at first,or until some little experience inits use has been obtained. Tne whey shonid be distinctly acid, and if the ‘weather is cool, must bekeptina warm atmos- here, in Order to scquie the requisite acidity. hen whey is used in this way it assists the Tennet in its work of coagulation, and the acid pacers off as the whey is drawn, leaving the cheese sweet, mild, firm, rica, aud of good tex- ture It has none of the characteristics of cheese made from milk sensibly sour, as in aoe it willbe hard and retaim an acid This matter of manufacturing fall cheese is of the more importance jnst now, as dairies are commanding high prices, while a poor article of the character referred tois not wanted for shipping at any price, and is a drug in all PERSONAL.
