Eee EES ES TT THE EVENING S7AR. How to Make Coed Cider. The folluwing metaod of making cider, which is valuable just iow, aud should be followed in the future, is extracted from Mr. W. O. Hic- kok’s trade circlaur: There are comparatively few persons who are aware how richadrink it is when made pure; free from water, the taste of straw, and Aji the impurities that, under the old fashioned systemof cider-making, are incorporated into its _comosition. When pure, and well made,i: is doubtless far heal’.nier than wine,and for liver complaints it is a sovereign remedy. On this account alone tae poFtable cider-mills that make cider with- out straw, are a benefit to the community; and when the fa: Tr will take the same pains with his cider that the vine-grower does with his ‘wine, he will find an uniimited demand for it at bighly remunerative prices; and ifthe severe excise tax now imposedon whisky will turn the attention of the people to cider it will con- fer an inestimable benefit. Pick ali the apples, rejecting those not sound, and wash them clean, and afterwards let them He and get dry. Grind and press them, usin; no water or straw, or any substance that wil the cider'an unplensant taste, as on the purity and clearfiiness of the apples depends the qual- ity of tre cider. Strain the juice through & ‘woolen or other close bag, put into clean bar- rels and set in a moderately cool place, keep- ing the barrel full ail the time, so that all the impurities may work off at the bung. After it has done working rack it carefaily off, let it stant afew days and bung itup. As the air tends to sour the cider it is a good plan to pro- ‘Vide a bent tin tube, one end fartened in the bung and the other todrop downin a bucket of water. This willlet allithe gas pass off and not let the air get to the cider. The auick- @ the ace is pressed after being ground, the lighter the color will be; and darker, if not ¥pressed for 24 hours after being ground. The cider from the second and third pressing will be the richest—the reverse,is the casein making wine. Cider-making should be conducted with all the carethat wine makingis. Most any sour apple will make cider, but more generally an apple full of juice and not very good to eat, will make the best. The Virginia crab, per- haps excels all other apples for cider-making. Ren bottled up witd a little rock candy and wired, it will, after standing some timegeparkle lake champagne, when opened. To get cider strong, expose itin atab in extremely eold weather and remove the ice that forms: as this can only be water, it leaves the cider of additional strength. Any substance put into arrest the termen- tation is of doubtfal value, as all good cider must be perfectly fermented to beheaithy. You had better depend ratner on careful and clean making, and bottle tightly at the proper time. Scalds and Burns. The best, most instantaneous and most acces- sible remedy in the world, is to thrust the injured part in cold water,send for a pkysician and while he is coming cover the partan inch or so deep with common flour. The water gives instantaneous relief by excluding the oxygen of the air: the flour does the same thing, but is preferable, because it can be kept more con- tinuously applied, with less inconvenience than by keeping the part under water. As they get well, the flour scales off or is easily moistened and removed. If theinjury is at all severe,the patient should live mainly on tea and toast, or gruels, and keep the bowels acting freely every day, by eating raw apples, stewed fruits, and the like. No better and more certain cure for So and burns has ever been proposed.— Dr. ali. Specimens of Wool. Some valuable hints are given by the Rural New Yorker, on the proper way of taking and preserving specimens ot wool. They should not be stretched a particle, whichinjures the crimp; and especially they should not de drawn through the fingers which destroy both crimp &nd lustre. Itts better mot to handle them at all. They preserve their natural yolkiness and gloss much better done up in oiled silk, or tea chest lead, than in paper. They yellow less if kept from the air. People who have ‘made their pile’ on petroleum are there too, while the upper avenues are all alive with showy equipage, en route for the Central Park,driven in the interest of Tom, Dick and Harry, whose riches have sprung up like Jonah’s gourd—in anight. After nightfall these butterflies, male and female, will attend the opera and the the- aters, scandaliziug each other while pretend- ing to enjoy Brambilla or wondering where sueh-and-such-a-one got his or her “turn-out.” The truth is, Gotham was never just as giddy as itseems to be at present. The men arerun ning mad with speculation in stocks, gold, oil and politics, amusements,jand the entire cata- logue of the pomps and vanities.—Cor. Phila- Inquirer. BENEFICIAL INFLUENCE OF TEA.—The ben- eficial results of the introduction of teas and coffee have been strangely overlooked or un- derrated. Ithas been, however, well described as leading “to the most wonderfalchange that ever took place in the diet of modera civilized rations—a change bighly important, both in a moral and physical point ot view. These beverages have the admirable advantage of affording stimulus without producing intoxi- cation or any of itsevil consequences. Lovers of tea and coffee are, in fact, rarely drunkards, and hence the use of these beverages has bene- fitted both manners and morals. Raynol ob- serves that the use of tea has contributed more to thesobriety of the Chinese than the severest lawe, the most eloquent discourses. or the best treatises on morality.” Tea isso little drank in Germany that it acts like medicine when taken by & native, and persons decline & cup of good bohea with «No, I thank you;I am quite ell at present.” THE ATLANTIC CABLE TESTED.—The At- lantic which isto be laid next summer be- tween England and America, was recently tested to try its strength and ductility. A \ given length was taken, suspended, and grad- ually weighted until it broke, the elongations succeeding each additional weighting being duly registered, the cable selected being the weight ofsix three fifth tons. The case, the spiral wires invoiving it, the insulating body, the jute yarn, and each separate strand of the cable, were similarly tested. It was found from those experiments that the more the fibres of wire were brought intoa state of tension, the c= became its strength, and thatas aninsu- jator gutta purcha, although not so perfect as India rubber, is far more durable, and that the cable as now manufactured will be able to bear astrain four times its own weight when laidat the bottom ofthe Atlantic. How A CLERGYMAN CURED HIS APPETITE FoR Toracco.—I had a deep wellof very cold ‘water, and whenever the evil appetite crayed indulgence. I resorted immediately to fresh drawn water. Of this I drank what I desired, and then continued to hold water in my mouth, throwing out and taking in successive mouthfuls, until the craving ceased.
