Fill the body, and sew it up with strong thread. Flour it well all over, and when the oven is well heated through, put it on dripping pans that | ptt catch all the gravy. Let it stand in two or three hours, according to the size of the pig. Lat it be well crisped, and of course hand- Somely browned. hen you take it from the oven, mash two ade of flour, with butter enough to mix wi and dip on the drippmga little at a time at first until melted, then pour it om, stirring it until thickened, season it well ‘With salt, ana add it to the brains bruised fine, and then send it to the table. The head must be cut off, and laid upon the platter. To Roast Gersk anv Ducks.—See to it | that they are well dressed, and then boil them &n hour or more, according to their age. When ‘they begin to feel tender take them out, and having your stuffing prepared, of bread, salt, pepper, and butter—scme like sage,—made soit, fill the body. and fasten it up with thread. Roast them brown. Make your gravy of the dripping; serve both with apple-sauce. Poul- aD when roasted or boiled, should have the wings and legs fastened close to the body. with cord tied around. To Roast a TURKEY.— Prepare the stuffing with bread, salt, pepper, butter, cinnamon, or nutmeg, or a jittle lemon peel, or parsly and thyme, chop and mix all well together with one or two eggs, beat well. With this dressing strong thread. Roast the turkey to a flae brown, not burning it. It will be done in an hour and a half, or if old and very large, two hours or more. Make a gravy ot drawn batter and the dripping. Another sauce is made of half a pint of oysters boiled ina pan, thickened with a lump of butter rolledin fiour. Only let it boil once. Serve this by itself, in con- nection with other gravy, for every person | does not like oyster sauce. To Bor. a Duck oR Rabrit.—Use a good | dealof waier, and skim it as often as anything rises. Halfan bour wiil boil them. Make a | gravy of sweet cream, butter, and flour, alittle | parsley chopped email, pepper and salt, and stew until done, and lay them in a dish, and | pour the gravy over them —Skilful Housewife, Dried Air Unhealthy aad Injurigus. | As the cold weather approsches, and the windows of dweiling houses are shut down, | and not only shut down, but either caulked up | tightly, or another outside window put over | the whole, eo 4s to keep the air outas much as | possible, and the doors all tightly listed, and the stoves heated up, the air not only becomes heated up above summer temperature, bat it becomes dried, or in other words dives.ed of its Batural moisture, and therefore rendered un- healthy in proportion as it is so deprived of this necessary ingredient. Since the use of furnaces in cellars, which are nothing more than stoves out of sight, and therefore have less att ntion paid to the regu- lations of them, the dryness of thenirin sitt and other rooms, warmed by them has b increised, and, by conseqnence, the trouble: incident to such a condition. This is made ey- | ident by the difficulty of keeping many kinds of plants in sneh rooms in a healthy and flour- ishing conditicn, while some piants used to do well when the rooms were warmed with the | common fire-place. | Different calculations have been made by different experimenters on the amount of mois- | ture generaily contamed im air, and the amount requisite to keep it in it may be calied a healthy state or condi iter in the American Agricuitu by 15 feet and 9 feet h feet of air; at the freezing point this amc fir will contain one to 50 degrees it wiil nearly a full pin it will absorb ne: not confi art of water: raise it bsoro two ant on: y increasing the heat yon increase the ca pacity to absorb mois- ture. In a cold room, the air feels damp: warm it b comes | dry and unpleasant—the moisture having been absorbed; and by still raising the heat iss ab- sorbent power is increased, and it takes the | moisture from the skin. Cool the air down ehsorbed, and the again. and the moisture that had be and rendered Istent, will be depos room again feel dimp. In old times, when the clumsy hox-stove | was first introduced into stores and school- houses, a basin of watex used to be placed upon the top of it--the evaporation from which used to supply tke air with moisture in pro- portion to its heat—and thus yoor skin, and | other parts of the tony were not likely to be | robbed* of moisture. In process of time, as “air-tights” and hidden furnaces were adopt- | ed, the basin of water was left ont, and the process of warming and drying the air was carried on nt one operation. The resuits have been prejudicial to health. Physicians will tell you that it bas been one of the agents for bringing on new types of disease, and ia some instances new classes of dise: Tt lool:s rea- sonable that such should be the result. An atmosphere too dry for plants to grow and be | healthy in, is not the one for hurhan beings to grow and be healthy in. It is therefore necessary that, with the means | ot heating rooms, you should aiso have the | means of moistening them. The two should always be used together. The furnaces now in use are not well adapted to fixtures for this purpose. A vessel of water in or near the register would be in the way. A vessel might be placed in the hot air chamber with ana rargement to feed it us the water evaporate: butsuch athbing is seldom used. The writer above referred to recommends that a cloth moistened and hung near would be a simple and cleanly mode ot supplying moisture, but this would often need to be replenished. ‘We mention these things now with a view to calling attention toan important subject, and here leave it to your ingenuity to remedy the evil in the best way you can.—Maine Farmer. wa In Nebracka the snow drifts are twenty- five to thirty feet deep in some places.
