The importance of the fall of Vicksburg to the Union cause is not likely to be overrated. Gen. Jefferson Davis himself has declared how necessary that place and Port Hudson are to the success of the rebel cause. In December last he paid @ visit to Mississippi, to inspect the defences of Vicksburg, with which bevxpressed himeelf satisfied. In a speech which followed at Jackson, betore the Mississippi Legislature, he suid: Every effort will be made to places, with the onject ot forcing of the Mississippi, of cutting off ‘comin anications with the trans-Mississippi Gepartment, and ef severing the western froin ibe esterm portion of ue Confederacy. Let, iiwho have at heart the sufety of the y so without delay to Vicksburg and Port Hudson; let them go for such length of time as they can spare—for thirty or sixty, or days. Let them assist in preserving sippi river, the great artery of the country, and thus conduce, more than in any other way, tothe perpetnation of the Oonfed- eracy and the success of the cause.” The Fuckson (Miesissippi) Appeal some time ago said: ‘ “The enemy that is now making such hercn- Jean ellorts to wrest the river from us are fully aware of the great advantage to them and the inestimakle detriment to us thatsuch a result would work out their efforts should and must be thwarted. If necessary Gen. Pemberton should be furnished with one hundred thou- sand men to beat them back. Such a force would be required only for about the space of two months, after which time the heats of sum- mer and low water will do our fighting for us. “Our hold upon the Mississippi once wrest- ed from us is gone forever, or at least so long as the war shall continue, which would isuiate the Government trom the west, ent off all :n- tercourse, and place us at disadvantage wien we shall enter upon the adjustmeut of terms of peace. The very thought of such a result is excruciating.” The Richmond Enquirer of May 30th, in an | article reviewing the military and Politica, bearings of the contest, spoke as follows: “Vicksburg, as we have goed nope, wil! not fall, and cannot fall. We bave there a tine army, brave to desperation, and led by able commanders. Every motive, every passion that can exalt soldiers to the pointat which men conguer or die, is there present. * * “Yet, if it be fated that, in ‘e of all human valor and devotion can do, Vicksburg and its defenders should become the prey ofits enemy, then indeed will come the tug of war. Then also will come the political crisis. Whatever of imbecility and faint-heartedness and down- right lutent toryism and treason exists in the Coniederacy will at once receive a new acces- sion 0: weakness; many will again begin to ery out for an ‘honorable peate,’ as they czll it, by means ofsubmission. * * * “Thus, Vicksburg is at this moment a point not only of strategic, but also of political im- | portance. While our flag flies defiant over the greatriver,no party of compromise can ven- ture to raise its head: no man will dere to breathe one word of “reconstructien,” in whole orin part. All will be good Confederates. The cause which is supposed to be failingand sink- ing is the one which is likely to abandoned by the cowards and betrayed by the traitors. To the cause that prospers we are always trne as ster]. * * *¥ ~ Yet some there are of 2 meaner type—pray God there be few!—who would see in the fall ef Vicksburg an occasion, perhaps even a reason—perhaps they mighteven see an honest and j otic reason—tor drawing back from the extreme measure cf our prond position, aad listening to compromise and an honorable pence.” Cn the 12th of last month the Mobile Regis- ter, in the conrse of an exceedingly sanguine leader upon “the situation” at Vicksburg, con- cluded: “The relief of Vicksburg has been a question offerces, If Gen. We should think not.” We might continue fhese extracts, cut from the rebel journals from time to time, showing the convictions of the people of the South in reference to the vast importance of Vicksburg, not only in behalf ot the Mississippi Valley, but of the whole Confederacy. There is no doubt that its capture is the grandest achieye- ment of the war, both asa military perform- ance and in its bearings upon the fortunes of the rebellion. Hints on Butter-making. DEPTH OF MILK.—Col. Pratt, of Prattsville, Greene county, formerly the celebrated tanuer, now equally successful with the dairy, finds that the largest quantity of cream rises and consequently the greatest quantity of butter is made, when the milk is one and a quarter inches in depth in hot weather—and an inchandahaif in cool weather—seven or eight quart pans thns containing but two anda half quarts for the first named depth, and three quarts for the latter. The temperature is kept as nearly as ossible, to 62 deg., although in warm weather it may run up to 65 deg., andin extreme cases to 70 deg., x NEW WAY OF MAKING BUTTER.—J. Zoller, of Oswegatchie, N. Y., saves the labor of sitting bis milk in pans, skimming and taking care of the cream, by simply straining the milk of one day into six churns, and churning next morn- ing, by horse-power, the milk being then sour, put not loppered. He thinks he also makes more butter in this way, from the same quanti- ty ot milk. The milk being sour, produces but- ter more readily thanif fresh. An experiment carefully made, with cream from pans, and by the above method, resulted in giving ten per cent. more butter from the churned BUTTER WASHING..—A correspondent of the Boston Cultivator says he has not had rancid butter in the spring for thirty years. He washes it. Not with water, which he, with most good butter-makers, regards as injurious, but with sweet skim milk, salting it atterwards. Have any of our readers tried this way, and with what result? There are some good but- ter-makers that wash their butter with water, and make 2 better article than some bad man- ufacturers who donot wash it. Butequal skill, cleanliness, and careful management, would doubtless with these good manufacturers make tetter butter without washing. : Poison Cheese. wee airymen who are using newly pain! pals al cheese tubs, should be careful tohave them thoroughly and repeatedly soaked before us- ing, with whey and water, until there is no taint or odor from’ the new paint; otherwise more or less poison cheese may result, @heese poisoned with ] extracted from the paint by the milk and whey, and deposited in the curd, is not observable when first made, butdu- ring the process of curing it shows Itself in dark and discolored particles through the, cheese, injuring its sale acd rendering ita dangerous article of food.
