In these times, whem the b at business talent and most energetic enterprise ¢ the land is prone to seek that channel of making mopey, the amount of patronage that can possibly be achieved by an American hotel regulates the manner in which it is kept, for the most part- W berever a rush of travel or other patronage may be relied on, there the traveler may, in nine cases outof ten, rely upon finding a capital hotel. In the course of our extensive tour of this season we found this rale almost invariable in its operation; while we also found g: od hotels at many points where the business they enjoyed could not possibly compensate those keeping. The Herald; tow. ever, is correct in the spirit of its criticisms upon American hotel cooking generally, for the United States continues to be even yet what the French traveler pronounced it to be many years since— **the land of many religions and ove gravy.”’ As the taste of our countrymen in such matters changes—and it is rapidly changing—the style of American hotel cooking will change with it. At present. nine-tenths of the population of the United States prefer over-done lean, of, roast beef, to the finest French-pattie conceivable. The truth is, we Americans as a general thing care more for dinner arrangements that economize the time fn which it may be necessary to eat the dinner than for the exercise of elaboration and exquisite taste in its preparation, provided it be composed of substantial and wholesome food. Nevertheless, to please the palates of the traveled, one may uearly always procure an excellent meal cooked in mod- ern style in almost every American city hotel. The leading hotels of this city, for instance. though their business season exists for but au average of four and a half months in the year, are all as well kept as any reasonable person could possibly de- sire. In the course of the tour refeired to above, we found no tel in all respects equal to that of our fellow-citizens’, the Brothers Willard, which is capable of accommodating, comfortably and elegantly. as many guests as any other in the Uni- ted States, with the exception of perhaps two in New York city. In this opinion weare borne out by three or four gentlemen entirely capable of judging in the premises who made a tour this season similar to ours. and who we have seen here since returning to Washington. es A Rir Vax Wixxce.— Though politicians throughout the country as a general thing strive to wake up the minds of all in their endeavors to advance the interest of their particular party, and in the main are vastly successful, yet it seems that there are some happily ignorant of these tur- moiis, aud who seeim perfectly satistied to remain in blissful Innocence of the various poiitical changes which at certain periods occur in the dilferent departinents of our Government. Asan evideuce of ‘this, we may meution that a letter was recently received at the Interior Department addressed to the Hon. Thos Ewing, Secretary of the laterior, who, it will be remembered, beld that position as far back as the administration of Gen. Harrison. It is quite customary fur the heads of the different bureaus to receive letters addrersed to those who immediately preceded them in ollice, bat this correspondent seems a good ways behind the times. Scott. 7 The straight Americans of New York, are dissatisfied with the eclectic policy pursued by the American State Convention, and announce their determination to act without reference to its action {07 It is thought by some that the negotiations relative to the proposed treaty with the Juarez government in Mexico, will be transferred to Washington, both Senor Mata and Senor Lerdo being understood to be in favor of such a transfer, and to have urged it upon Juarez in their dis- patches. IF Itis expected that the question of the res- toration of Bishop Onderdonk will give rise to great excitement in the Diocesan Convention to meet at New York this week. It is suid that some of the Low Churchmen who signed the Bishop's petition for restoration have backed out, and or. dered their waimes to be stricken from the list {> Late advices from Pike's Veak state that the proposition for organizing a State government bad been defeated.
