R Co., 1183 Brad- Los Angeles, Calif.— the charge you satisfactory SS ee ED RARE, DEADLY POISON FOUND IN HOME-CANNED FOODS NOW BEING BATTLED BY DOCTORS ALBANY, Ore., March 8.—{United Press)—Four quarts of home-canned beans, taken from the home of Rheinhold Gerber here, where twelve persons were poisoned to death, contained enough of the most virulent poison known to man to wipe out the ar er es of the United States, This was the statement of Dr. J. C. Geiger, of the United States Pub- lic Health Service, who came here from the east to study the cases of victims of botulinus pofsoning. Twelve persons, three entire fam. lies and one member of a fourth, were wiped out tafer a family din- ner. Not a single one present sur- vived. The poison was so deadly that Es- ther Gerbig, suckling child, was pols- oned nursing at its mother’s breast. Because appearance of this poison is so rare much is yet to be learned about it, Dr. Geiger said. It was accordingly with interest that he watched the experiments of the state public health service in connection with the Albany case. Experiments with chickens showed that a newly developed anti-toxin has promising results. A white chicken was innoculated with one- two-hundreths of a drop of the juice taken from one of the jars, moped around for some days and died. Another chicken treated with the i-toxin, showed no ill effects from botulinus inoculation. Sufficiently high temperature to destroy the spore of botulus, This can only be obtained by bolling at approximately 240 degrees, Fahren- helt, to attain which pressure must be used. If botulus spores have been left to be’ canned through carelessness in washing, ordinary boiling will make the spores harm- less. Heat Must Penetrate 3. The heat must penetrate the food product. Strangely enough, Dr. Geiger explained, no table has yet been prepared to show the num: ber of minutes a given weight of food must be boiled at a given tempera- ture to render the food safe, al though such a table may soon be worked out. 4. The acid reaction, if present, is an element of safety. As the acid content of a food becomes high- er, the danger from botulism is de. creased, The altitude at which canning ts being carried on must be considered as a factor in determining how long food should be cooked.
