Today’s Recipe Broiled Beef Cakes with Bacon (4 to 6 servings) One to one and one-half pounds ground round steak, 6 strips bacon, % teaspoon dry mustard, 1% teaspoons minced young onion, 1 tablespoon minced parsley, salt, pepper, butter. ead beef, mustard, seasoning. Use chopped round that is moist for best results. Shape into flat round cakes, not more than two inches thick. Bake each cake with a strip of bacon and secure the bacon with a toothpick. Lay on & pan and place under broiler. When one side is browned well, turn and brown the other. Remove at once to hot platter. Sprinkle with lemon juice, dot with butter, dust with a little paprika and garnish with slices of lemon, Cheese Biscuits Two cups flour, 4 teaspoons tar- trate baking powder, % teaspoon salt, 4 tablespoons shortening, % cup milk, or half milk and half water, grains cayenne, 1 cup grated cheese. Sift together flour, baking powder, salt and cayenne; add shortening and mix in thoroughly with fork. Add cheese; mix well. Add liquid to make soft dough. Turn out on floured board and toss lightly until outside looks smooth, Roll out % inch thick. Cut with small floured biscuit cutter. Place biscuits on top of creamed mix- ture in baking dish.
