Ted Biech made a@ trip to Mine neapolis over the week-end, > | Today’s Recipe Cranberry Fixin’s Below we are giving a few recipes for cranberry garnishes to serve with the Thanksgiving turkey. ‘To make thick cranberry sauce, use 4 cups boiling water, 2 cups sugar. Put cranberries and water into sauce pan and cook, covered, for 10 min- utes after boiling point is reached. Add sugar slowly and cook just long enough to dissolve sugar. Turn into a mold and chill to become firm, If you desire cranberry jelly, use four cups cranberries, % cup boiling water, 1 tablespoon lemon juice, su- gar. Pick over and wash berries. Put into a large sauce pan with water and cook until soft. Strain through jelly bag and measure juice. Heat to the boiling point and add half as mych sugar as juice. Stir until sugar is dis- solved. Boil hard for five minutes Vand pour into molds. Cool and then {chill in ice box. Unmold and serve with garnish of whipped cream. For cranberry salad, make jelly ac- cording to the above recipe. Before it stiffens add 1 cup diced celery and 1‘cup cubed pineapple. Turn into molds and let stand on ice to chill and become firm. Unmold and serve with a garnish of mayonnaise folded into whipped cream and forced through a pastry tube to make swirls which in turn are decorated with halves of walnuts or pecans.
