It was none other than toasting, instead of roasting, the coffee berry. The fierce, direct heat of old fashioned roasting, it was reported, evaporates a large percentage of the flavor producing aromatic oils, resulting in cof- fees thin and flat in flavor, their most delicious flavor “roasted out.” _ The new, toasting process, it was further reported, actually seals the surface of the coffee berry; retain- ing in each berry the maximum of these oils. Toasting was later reported by the\Van Cleve Laboratories, members of the American Chemical Association and outstanding food chemists, to develop 35.7% more flavor than could be developed from the same coffee when roasted.
