Cook in a aouble boller | with two slices of onion and four cupfuls of milk thirty minutes, Melt three tublespoonfuls of butter; add three tablespoonfuls of flour and cook one minute, then gradually pour on the hot milk, stirring cou- |stantly. Season with salt und peép- per; add one-half cupful of cream; strain into a tureen and serve at once. Brussels Sprouts With Chestnuts. }—Boil a quart of brussels sprouts juntil tender; drain and cook in | three tablespoonfuls of butter. Cook jone-quarter of a cupful of butter | with two teaspoonfuls of sugar un- til browned, Add one cupful of | boiled chestnuts and cook until the | chestnuts are brown, then add the ° H | | j Sauteed sprouts, one-third of a cup- i ful of brown stock, one-half tea- ‘spoonful of beef extract, one-half tenspoonful of salt, a few grains of cayenne; reheat and serve hot. | Lamb Fricassee.—Cut in serving \Sized pieces three pounds of lamb | from the fore-quarter. Cover with | boiling water and cook slowly un- til the meat is tender. Remove ‘from the water, cool, sprinkle with | salt and pepper; dredge with flour | and saute in butter, Arrange on {a platter and pour around the meat ja brown sauce prepared from j browned flour, butter and the li- quor in which the meat was cooked. | Serve with peae, | Peach Fritters.—Mix and sift one ‘ cupful of flour, two teaspoonfuls of | baking powder, three tablespoon- | fuls of sugar and one-quarter of a teaspoonful of salt. Add gradually one-third of a cupful of milk, one well-beaten egg and three peaches, cut’ into gmall pieces. Drained canned peaches may be used. Drop by spoonfuls into deep fat, hot enough to brown a one-inch cube of bread in a minute. Drain on brown paper and sprinkle with powdered sugar.
