Sister Mary Tells How to Mix ’Em | Sate Z y (Sister Mary’s Kitchen.) You are having four or five tables of bridge or the sewing club in for the afternoon. Salad is the first thing you thinik of serving, being a woman, but: you wonder just how much “it will take.” These rules are calculated to serve twenty-five. Chicken Salad for Twenty-five Ten pounds fowl, 4 heads celery, % cup oil, 6 tablespoons vinegar, 2 tea- 3poons salt, 1 teaspoon paprika, 1 can pimentoes, 4 hard-boiled eggs, 1 bunch parsley, 3 cups mayonnaise. Put chicken on td cook in boiling water. Use as little water as pos- sible to prevent burning. Cook until ‘ender but not falling from the bones. Jare should be taken in choosing chickens for salads. . The chickens should be year-old rens if possible, but on no account thoose a springer for the meat will simply cook to pieces and be impos- sible to cut in neat dice. When chicken is tender, cool. Then ‘emove meat and cut in dice. There hould be about 8 cups. Chill oil and ‘inegar. Beat well, season with salt Let stand in a cool place for an hour or two before mixing. Wash celery. Cut in dice and chill in cold water. Drain and dry on a towel. If the celery is prepared in the morning and left wrapped in a towel until, needed it will be very crisp. There should be as much celery as meat. Cut pimentoes in matchlike strips. Wash parsley, drain and wrap in- a towel to crisp. Mix - chicken, celery, pimentoes and enough mayon- naise to make moist.
